What's for dinner Saturday?

What's for dinner tonight at your house? Nothing exciting here. We're having a clean out the frig night so it's leftover tilapia from last night and scalloped potatoes that I added cheese to to "disguise" them. haha! Probably peas

We had some leftover lamb leg steaks and gravy, so tonight is shepherd's pie. Broccoli on the side.

Chili's

Went for their Southwestern egg rolls, but they had gone up in the price.

Settled for chili con queso, didn't know what I was getting.

Pretty good, but I've been thristy all afternoon long.

Rhizo, hope you're finished in time for the movie. Those kabobs sure sound yummy! YogaLady, does that mean we won't see your sweet self for a few days? ..Asking me for a recipe isn't usually something I can help with. But I'll try! And I know that I said orzo but I MEANT coucous! But it sure would work with orzo. Fix 1 cup coucous and 1/2 cup red quinoi according to the directions on their labels. Be sure to rinse the quinoa first, and I prefer the red....it tastes nuttier to me. I cook both of them in chicken broth. This salad can be made just with quinoi, but I didn't want to scare my guests. :-) Veggies....to equal about two cups or more : chopped green onions, red bell pepper, english cuke, chick peas (rinsed and drained), halved cherry tomatoes. Use your favorite vinaigrette . I made a lemon dressing with quarter cup fresh lemon juice, quarter cup olive oil, two cloves minced garlic, chopped fresh oregano, sugar, S & P to taste, and a splash of balsamic or other vineger. I didn't use all of the dressing. Add it to the couscous and quinoi while still warm, cover, and chill. When ready to serve, stir and taste to add more dressing if necessary. I added a bit of lemon zest on top for serving and fresh mint from the garden .

Today was a gloriously sunny day and for some reason I was in the mood for cooking and baking. I made my regular 2 loaves of bread and I had a bunch of ham stock from my boiled ham yesterday. So I made a big pot of cabbage soup and another pot of potato soup, using some ham stock. I also threw some ham pieces in the potato soup. We had a well-done roast of beef with carrots around it. I boiled some Yukon Gold and a sweet potato. While the oven was on, I made some butter tart squares. Here are the fruits of my labour today!

Thanks, Terri. No wonder you don't feel like cooking after all that baking and cooking your did over the holidays. I hope you're just tired and not coming down with something. (Fingers crossed!) Thanks, Pam. The only thing that happened was I got that cold/sore throat that's going around, but with my compromised immune system (whatever that means), it knocked me for a loop and I spent over 2 weeks in bed--half the time barely able to drink due to the sore throat. It sure feels good to feel half way decent!! I'm sure sorry about your sister and it must be hard on you taking care of her when you aren't used to it. So nice of your DH to be helping you out--a lot of men wouldn't. Enjoy the French toast! Hi, Mary--thank you. I haven't seen you posting much lately and was hoping you are feeling okay. I sure don't envy you that 22 degree weather. Ick! I think I have meatballs in the freezer i made earlier. I'll have to check. Shirley, thank you. Yes, I think I'll be living on Stouffer's until I get a little stronger. Still a lot I can't eat but, hey, I'm getting there one bite at a time. Can't wait for a fried egg sandwich! Woohoo!! Nothing fancy here tonight either. Just home made stuffed chicken breasts, harvard beets, mashed potatoes & gravy, deviled eggs and a small side salad.

OOOOH yes,,some fresh home made bread if it gets out of the oven in time...LOL

I haven't made shepherds pie for a while Mary_c--and never with lamb. Enjoy!

We hardly ever eat at Chili's. Too spicy and salty for us. Of course, we haven't tried it for a few years so maybe it has changed. The kids love to eat there.

I tried two new recipes tonight. Chicken Parmesan salad on hoagie rolls (Rachel Ray made it today) and Bobby Flay's Green Onion Slaw. They were both very interesting. DH liked them. On the other hand, he was probably thrilled to get some food. I only cook a couple times a week these days. Always trying to diet. I don't know how I'd rate these recipes but they were very unique in flavor. No mayonnaise in either one. Just a little E.V.O.O.
