What's for dinner Friday?

We're having Thai pork meatballs on lettuce with sweet chili dipping sauce and slice mango. Supposed to have it last night be didn't get back in time to fix them.

Looks like rain and I keep hearing thunder, but so far, no go. We sure could use some.

Neighbor and I had a "get to know eachother" lunch today at The Cajun Steamer.

She and I started out with a cup of chicken and sausage gumbo, awesomely great!

Friend had cajun fried catfish and hush puppies.

I had an appetizer of fried crawfish tails

Dessert we split bread pudding with bourbon sauce. That bread pudding was disappointing but the sauce was great.

I would have preferred the fried cheesecake!

Tonight was mashed potatoes, meatloaf, gravy and green beans.

Glenda, those darned love bugs drive me nuts! I noticed one on the car this afternoon. Hope you asked the Ashley Mac to put the spinach tart back on the menu. Did you have the sour cream biscuit?? Jasdip, do you have your heat on at night? Or just enjoy the coolness? We have the worst Chinese food around here. On the other side of town, there must be 5 gigantic Chinese buffets. Wish we had our favorite small Chinese place we had in Dunedin. Such fresh tasting food. Shirley, I'd be right over if I could taste right, darn it. That sounds so good. We're all eating egg salad, seems like. Hey, it's good to share meal ideas, right? Georgysmom, glad you played well today. See practice pays off!! When does the bathroojm makeover start?

It was a beautiful day here today but I was busy cleaning out my closet so the contractor can work on it while we are away. We're headed for the outer banks on Sunday and unbeknownst to DH I'm having my closet ripped out, painted, rebuilt and new carpeting. If you don't hear from me in a while, I might be looking for a new place to live. LOL We're going out for dinner tonight and then we are going to see Spamelot. I could really use the time at home but we got the tickets weeks ago. I'm sure it will be fun

Glenda, nice way for a restaurant to lose customers, huh? You aren't doing so good this week--that's two days in a row for bad dinners. At least yesterday, you got dinner! Seagrass, your meals are likely more tasty than restaurant meals anyway. But it is nice not to have to cook all the time. Sue, sure hope you feel better. I bought some Alka-Seltzer Plus cold med. in case I feel a cold coming on. It works well for me. Chicken soup always helps, too. Jasdip, I was able to eat three saltines with ham salad on top! Woohoo!! Also ate a mug of noodle soup. Of course, I'd rather have your taco salad :-( Isn't it nice to see the sun shining? Mary, I bet 38 did feel like a heat wave after that 19 you had the other morning. I'm waiting until next week to clean. The house stays pretty clean since I'm not cooking. Shirley, I need to make some beef barley soup. It sounds delicious. Glad you had sunshine--it feels so good in the winter. (Guess it isn't winter yet, though.) Jean, you're doing really well with your low-carb meals. You're a saint to fix your DH mashed potatoes when you can't eat them!! Aw Hellion, I'm waitin' for the day I can eat bacon. I think I'll just fry up a whole pound and have at it :-) Georgysmom, I forgot you were in Florida with your GF's. Sure wish you had better weather, but I just know you're having a great time anyway. I'll say a prayer to the weather gods for nice, sunny, warm days the rest of the week.

Bigack, beans and cornbread is one of my favorite meals. Sometimes I make the bread-like dumplings and pour the beans over a big ole dumpling. So good! Mary, I sure hope you weren't out there helping clean up the damage from last night. Not sure how your PT would feel about that. Walnutcreek, when I can't decide, sometimes I make an fried egg sandwich. Fast, easy cleanup and it fills the tummy. Hounds, it sure sounds good. I saw a recipe today on pinterest for a soup similar only it had smoked sausage and white beans with the greens. Enjoy! Matti, now see. Last night you were dreading WW and it went well. Congratulations! I know how hard it is to lose even 5 pounds.

I can not believe it but I turned the oven on to cook some chicken leg quarters and corn on the cob, bbqed chicken and roasted corn on the cob for dinner tonight with some garden fresh sliced tomatoes and cukes.

Wendy's apple pecan chicken salad. Worked today so didn't feel like making anything.

Mike asked me to make a Rigatoni and Sausage dish that I haven't done for a couple of months. It is so good, but takes some time to put it together. I also did garlic bread in the oven.

Rigatoni and Sausage

Penne Rigatoni 1 lb.
1-pound Italian sausage without casing
1 red bell pepper, diced
2 cups onion, finely chopped
1 tablespoon chopped garlic
1 teaspoon Basil
salt and pepper
1/4 cup olive oil
2 large bunches spinach or one large bag

Boil water, add some salt and Pasta and boil for 15 minutes until al dente, drain and put back in pan.

Brown sausage, remove to a bowl. Add some oil to pan and cook onion until glazed. Add in red pepper, garlic, Basil, salt and pepper and heat through for a few minutes. Add meat back to pan and reheat. Dump all into pasta and add about 1/4 cup olive oil; stir. Throw in fresh spinach and stir around until it is wilted but not too wilted.

Serve with freshly grated Parmesan cheese. A salad goes great with this meal.

If you want to spice it up some you can use hot sausage or a mixture of both hot and mild. You can also add some red pepper flakes for some heat.

* We like it best if you double everything and only use the one-pound of pasta. I don't do the hot and spicy.
