We are having Stuffed Peppers and.................

For supper we are having stuffed peppers and black raspberry pie. I have a pan of 15 halves baking. I am sending all but two of them to Amber and Mike's and half of the raspberry pie. They have invited Mike's friend to join them as one other time I had made some and he ate with them. That was quite a long time ago. I filled the peppers with hamburger, homemade spanish rice, some chopped up fresh zucchini, peppers and onions and 2 cans of tomatoes ready for chili, a can of stewed tomatoes, a can of tomato sauce and poured a quart of home canned tomato juice around them to bake. They also had some chili powder, cumin, garlic powder and salt and pepper. They will be topped with a blend of Mexican cheese. They are very full. So I hope they enjoy their supper.

I got one big bag of my bing cherries cleaned, seeded and frozen. I put them in ziplock sandwich bags and will put those in a freezer bag later. I have another big bag to clean yet. It started getting stormy here for awhile I was cleaning so decided I was tired enough for today :)

Oh, I love stuffed green peppers. Actually I love green peppers in almost anything except, maybe dessert.LOL DH doesn't like them at all. so when I cook something using them, i make a his & Her version. Dottie

My DW bought me one of those racks and they are pretty neat. I use it quite a bit. There are a lot of variations but the basic method is to cut the stem end off the peppers or slice in half if you want and remove the seeds and membrane. Then stuff with a combo of cheddar and cream cheese (you can add anything you like, italian sausage etc....just mix it all up together in a bowl and fill the jalapenos. I use my finger...it's easier...and then wrap 1/4 slice of bacon around them. (I pre-cook the bacon about 1/2 way to cook even with the peppers) and stick a water-soaked toothpick through and set them in the rack. Put on a barbeque (I use a Traeger smoker) on indirect heat until the peppers are soft and tender and the bacon is cooked through. Sometimes in the summer when the peppers are coming in I can make an entire meal of these! They are good! Good luck. Duane

Here's a well-known Spanish tapa which is also often served as a first or even a main course light meal. Piquillo peppers are small, sweet and slightly piquant Spanish red peppers which are sold tinned, skinned and ready for stuffing. (PIMIENTOS DE PIQUILLO RELLENOS CON PESCADO. 2 tins piquillo peppers, each 185 grams/ (6 1/2 oz)..about 15 small peppers (I used 1 tin of 390 grams=18 peppers) 200 grams/7 oz cod or any cooked white fish 3 cloves garlic chopped 1 TBS onion, minced 2 TBS olive oil 1 1/2 TBS flour 200 ml/7 fl oz (3/4 cup + 1 TBS) milk salt & pepper to taste grating of nutmeg 150 ml/1/4 pint (2/3 cup) cream pinch of cayenne 1 teasp vinegar Drain the tinned piquillo peppers. Allow 6 - 10 for stuffing and reserve the remainder for the sauce. Shred or flake the codfish or cooked white fish, discarding any skin or bone. In a saucepan, sautÃ© the chopped garlic and onion in the oil until softened. Add the fish, then the flour and cook for two minutes. Then whisk in the milk. Season with salt and pepper and nutmeg. Cook, stirring constantly, until the fish mixture is thickened. Remove from heat. Stuff the piquillo peppers with the fish mixture and place them in an oiled baking dish. Bake in a medium-hot oven for 5 minutes. (Alternately the peppers may be dusted with flour, then dipped in beaten egg and fried in olive oil, turning them to brown on all sides.) Meanwhile, purÃ©e the remaining peppers in a blender with the cream, cayenne and vinegar. Spoon the sauce onto 6 dishes (if serving 1 pepper to 6 persons as a tapa - we had 3 each) and place 1 or 2 of the stuffed peppers on each plate. Serves 6 as a tapa, 2 or 3 as a first course. Hi everyone. I ended up in a time crunch & thought it would be quicker to do a one dish meal with the peppers cut up. Boy was I wrong. At least I found out that my farmer pork sausage is not as lean as his ground beef. Since farmer ground meat is frozen immediately, and not thawed prior to my use I'm not worried about safety, and may well use it raw next time. Those were such beautiful poblanos! A real shame I didn't go ahead and stuff them.

Deep in my heart, I'm thinking that if I can keep the Better Boy purchased plant happy enough, we might get a ripe tomato earlier than ever before. Only that one tomato plant raised from seed has managed to flower before Super Bowl Sunday and might produce fruit almost as quickly as the purchased plant, but others that are equally large might bloom soon. Some of them are getting that look about them. If only the weather would settle down a little so I could start the whole routine of carrying plants out into the sunlight. I am concerned about the chickens getting the green plants, which has not been a problem in the past. This group of chickens, largely new to us last Spring, are different though---they love green plants and travel far and wide, free-ranging about 4 times farther than any other flock we've ever had, looking for greens and insects daily. I'm probably going to have to carry the flats out to the garden so I can lock out the chickens. In the past, I just put the flats on a table and the birds left them alone. I don't think that will work this year. Our weather is so crazy. I'm looking forward to the warming trend that begins in earnest tomorrow, but not looking forward to the escalating fire danger. Our soil is warmer than usual for this time of the year, and our forecast high for Monday is 77. That seems like it would be a good day to plant onions if I am at home. I hate planting in cold weather, and this year I think I won't even have to do it---at least not with the onions.

I like some green pepper but not too much. Prefer it in items than the traditional stuffed peppers. I usually make the stuffed pepper filling and have with toast or something.

No din-din here. Had Taco Bell for lunch. It's warm here so I'll probably just drink a lot of water or make some of that deadly iced tea.

But that pie sure sounds good!

Your stuffed peppers sound just marvelous, I could really go for some but DH does not like them :-(
I fixed fried flounder filets, mac and chees along with peas plus I had some applesauce.
No dessert here but I did eat a Hershey Chocolate Bar after dinner.

Boy, you really do those stuffed peppers in style! They sound great! I have never made them, but you make me wanting to try it.

We had homemade pizza with diced tomatoes, onions, yellow peppers and pepperoni. It turned out perfect! DH even complimented.....That alone is a miracle!

If you love stuffed peppers you'll love this soup. I made it several time this past winter. It is now one of our favorites.

UNSTUFFED PEPPER SOUP
Ingredients
* 1 1/2 lbs lean ground beef
* 3 large green peppers, chopped
* 1 large onion, chopped
* 2 (14 ounce) cans beef broth
* 2 (10 ounce) cans tomato soup, undiluted
* 1 (28 ounce) can crushed tomatoes, undrained
* 1 (4 ounce) can mushroom pieces, drained (I haven't used mushrooms yet, I didn't have any both times I made it)
* 1 1/2 cups cooked rice

Directions
1. In a dutch oven or large saucepan, cook beef, peppers, and onions over medium heat until meat is no longer pink; drain.
2. Stir in the broth, soup, tomatoes, and mushrooms.
3. Bring to a boil. Reduce heat; cover and simmer for 30-40 minutes, stirring occasionally.
4. Add the rice, heat through and serve.

Your peppers sound yummy!!

We had Longhorn steakhouse tonight used a gift card we got for our anniversary a few weeks ago. DH had ribs and I had parmesean crusted chicken. Delicious.

I used to HATE (yes, it's a strong word, LOL!) stuffed peppers when I was growing up. I'd gag on 'em and it made mom so mad! Now I LOVE, LOVE, LOVE the things! :D Who knew? :)

Meatloaf,mashed potatoes,gravy and roasted asparagus. DH wanted a vacation from the grill. I love leftover meatloaf. I'm going shopping with DD tomorrow so I've got leftover for tomorrow night. Yipee!

I am not crazy about stuffed peppers...or I should say I didn't use to care for them. However, I LOVE stuffed cabbage. But I really only like the cabbage part! LOL

Years ago I worked at a restaurant/bar that was known for their homemade food, one of the owner's specialties was stuffed peppers. Her secret was (1) salt the cavity of the pepper before stuffing in, and (2) use pizza sauce instead of tomato sauce. Try it!!!
