My DW bought me one of those racks and they are pretty neat. I use it quite a bit. There are a lot of variations but the basic method is to cut the stem end off the peppers or slice in half if you want and remove the seeds and membrane. Then stuff with a combo of cheddar and cream cheese (you can add anything you like, italian sausage etc....just mix it all up together in a bowl and fill the jalapenos. I use my finger...it's easier...and then wrap 1/4 slice of bacon around them. (I pre-cook the bacon about 1/2 way to cook even with the peppers) and stick a water-soaked toothpick through and set them in the rack. Put on a barbeque (I use a Traeger smoker) on indirect heat until the peppers are soft and tender and the bacon is cooked through. Sometimes in the summer when the peppers are coming in I can make an entire meal of these! They are good! Good luck.

Glad you liked them Jackie. You can experiment with stuffings for sure, but they are really great with whatever you decide to stuff them with. I grow a Jalapeno during the summer called Mucho Nacho. It is a huge jalapeno that is very productive and great for stuffing. If you have the room grow some of those. Even in pots they are very productive. Have fun with your new toy!

Oh, neat! I've never heard of the racks before.

We make stuffed jals much like Duane. I cut them in half, stuff with cream cheese and a raw shrimp, then wrap with half cooked thin bacon (not the good slab kind). I put it together with a tooth pick and then grill open side down first. Flip and do the other side. We do this over medium high heat to crisp up the bacon. But, we don't have a really cool rack thingy.

I can make a meal of them too, for sure. Sigh, another thing goes on the gadget list. Well, that's just more for hubby to pick from when it's my b day or something.

Dwane, My hubby grows lots of jalapeno's every year.
but I don't think he's ever grew Mucho Nacho's. I'll have him look for them this year.

Jackie, I don't know what part of the country you are in but here in Michigan it's time to start peppers (from seed). If your hubby grows his plants from seed and wants some email me your h o m e addy and I'll get some in the mail. I ordered extra this year from Tomato Growers Supply and then I found I had an extra pack from last year! I started about 20 plants Feb.1 JUST for Mucho Nacho (I like it that much!) plus another dozen varieties. I started mine extra early to get out into the green house, but normally right around now is fine for starting peppers in this area.
