probably will do this: old fashioned fig preserves

5 pounds fresh figs
5 pounds sugar

1. Wash the figs, then trim off the stem ends. Put the figs into a large pot and cover with the sugar. Allow them to sit at room temperature for 3 hours or so.
2. Heat the figs and the sugar, stirring constantly, over moderate heat. Once the sugar has dissolved, increase the heat to high and bring to a hard boil.
3. Reduce the heat to medium-low and gently boil for 40 minutes, stirring frequently.
4. The preserves are done when the foam that has formed on the surface dissipates and the syrup coats the back of the spoon. Ladle the figs and syrup into hot, sterilized jars, leaving ¼ inch of headspace. Wipe the rims of the jars clean, then place sterilized lids on top and screw on the rings

Goo deal! Mine were free : ^D, My DSIL had a very big tree and no one eats them. here is the recipe I used

FIG PRESERVES (makes 2 1/2 pts)

2 lbs figs, unpeeled
3 cups granulated sugar
1 cup water
1/2 lemons, sliced thin

Prep Time: 25 mins
Total Time: 1 1/2 hrs

1 Wash figs gently in cold water.
2 Place in a large bowl, fill with cool water and soak for 20 minutes.
3 Make a syrup by boiling the sugar and water together in a large saucepan.
4 When syrup is clear and just thick, around 15 minutes add figs and lemon slices.
5 Bring to a boil over high heat.
6 Boil hard 1 minute.
7 Lower heat and simmer for 30 minutes.
8 Remove from heat.
9 Carefully pour into a blender and pulse to grind figs and lemon slices.
10 You may want to cook down for 10 or 15 more minutes to desired thickness.
11 Ladle into clean hot sterile jars and process in a boiling water bath for 10 minutes.

Hey Miss Glenda, I love figs too, could eat them right off the tree. Have you made the fig-strawberry jello jam, it's so good and very easy to make.

Fig-strawberry jello jam
3 1/2 cups mashed unpeeled figs
3 cups sugar
1/4 cup lemon juice
2-3oz packages strawberry jello (not sugar free)

Mix & bring to a boil figs, sugar & lemon juice cook 5-7 minutes
Stir in jello
Boil again 3-4 minutes
Fill jars and seal. (I use 1/2 pint jars)
Yield- 6- 1/2 pints
