What would you serve...

with a pork loin roast? I've never cooked one and I don't think I've ever had it. Should it be served with some kind of gravy? I have red bliss potatoes, carrots, fresh green beans, butternut squash and I think I have apple sauce in the freezer.

It's just DH and I and our sweet neighbor Iris (she'll be 88 next week), so it doesn't need to be fancy just good.

My Mother used to fix a very good gravy with hers and it included onion and sweet peppers. I really don't know how she made it, I am sure it was very simple with flour to thicken it. Sweet potatoes might be good with the roast or roasted potatoes and carrots. Maybe some green beans and cole slaw? Yeast rolls and a good pie for dessert! Sounds good to me.

The next time I make sausages, I'm making this recipe posted on the Cabbage Cook-a -long. It really grabbed me as the perfect accompaniment to assuages. Haluski (Pan-Fried Cabbage and Noodles) Servings: 4 4 cups wide egg noodles 8 TBSP butter 2 cups sliced onions, about 1/8 inch thick 6 cups cabbage, sliced thin Half teaspoon salt pepper Directions Cook egg noodles according to package directions, then drizzle with a bit of oil to prevent the noodles from sticking together and set aside. While noodles are cooking, melt butter in large deep skillet over medium-low heat. Add onion and saute, stirring occasionally for about 5 to 10 minutes, or until softened and just beginning to turn golden. Add cabbage to skillet, stirring well to incorporate with onion, and saute for about 5 minutes, stirring occasionally. Cover, reduce heat to low, and let simmer until vegetables are soft. Turn heat back to medium, add cooked noodles, salt and pepper, and stir well until noodles are heated though. Adjust seasoning if necessary and serve hot.

Me thinks this would make a great side dish Coucsous and peas 1 onion, diced 1 crushed garlic clove 1 tbsp. olive oil 1 cup frozen peas 1 tbsp. minced fresh dill Salt and pepper 1-1/2 cups vegetable or chicken stock 1 cup couscous 1. In a saucepan, saute the onion and garlic in the oil over medium heat until translucent, about 5 minutes. Stir in the peas, dill, salt, pepper, and stock and bring to a boil. Add the couscous, cover, and return to a boil. Remove from the heat and let the mixture sit for 5 minutes, or until the liquid is absorbed. This can be served immediately or can sit, covered, for about 10 minutes more. Fluff with a fork. Makes 4 servings.

I've attached the recipe that I've used for a long time, adapted from Gourmet Magazine.....it also has heavy cream and lots of rosemary. I can tell you that it.is.freaking.delicious. I served stuffed mushroom caps, marinated garden veggies, puff pastry cheese bites as appetizers. Sides included steamed haricot verts in a herb butter, spring greens salad with lemony vinaigrette (served as a side, not a course), marinated garden veggies. Dessert was homemade lemon ice cream, chocolate dipped shortbread cookies, fresh fruit and berries. This was a meatless dinner, but I've also served the lasagna as a side with herbed baked chicken or a nice ham. Look at this recipe option.

Mom used to make Hen au Vin when we were kids. Older layers that it came time for culling, there were a few every year for a while to stock up the freezer till next round. Best chicken in wine sauce, even if it wasn't the rooster. Most commercial retired layers get composted or made into pet food now and I think it's a shame. Older chickens can be very good eating. White or brown rice was usual, sometimes bread stuffing or mashed potatoes. Mushrooms, green beans, carrots, sweet potatoes or winter squash, asparagus, broccoli, caulifower... or on a special treat, a head of both broccoli and cauliflower served up with a cheese sauce and a creamy dilly sauce in boats on the table. Depended on the time of year what sides might get served up. There were almost always salads of various greens, and a bit of a bread basket to sop up what might be left on the plate. Wasn't unusual for mom to take the leftovers (sans sauce boats) and make it all into a soup, pot pie, or stir fry or two. Depended on the leftovers.

Our family loves applesauce with pork too. It would be easy enough to make gravy from the drippings for the potatoes or for the meat or for using with left overs. Mmmm, sounds like a plenty fancy and yummy dinner to me. Put some cinnamon in the squash --cinnamon sounds good with pork roast and applesauce!

I'd serve the red bliss potatoes, green beans and applesauce. I like horseradish sauce with pork roast, too. Older people don't seem to eat as much. Rolls would be good and a light dessert--maybe fresh peaches over pound cake (Sara Lee). I'd be happy to join you ;-)

Well I decided on steamed green beans, roasted potatoes, and baked then mashed butternut squash, with applesauce to go with the roast. I forgot to tell you I'd made lemon meringue pie this morning. I also managed a batch of Katherine Hepburn's brownies.
