What to serve with beer sausage?

I need some inspiration!!

I'm making braised beer sausage for dinner.

What would you serve with it?

I've got lots of potatoes, saurkraut and a well stocked basic pantry.

Help me!!

I'm kind of boring, what I usually do is slice up some cabbage and saute it until tender, add the saurkraut and sausage to that and heat until cooked and hot through. Mashed potatoes on the side and maybe some good rye bread (although I generally save the bread for sandwiches out of the leftover sausage).

Probably glazed carrots or sweet potatoes on the side to add some color and some sweet to the sour.

This post has me craving potato pancakes, which then makes me crave white asparagus with hollandaise. I miss German food. I like Annie's idea for the glazed carrots, too.

Try this. I have, and so good. Use your cajun sausage!!! It's a Paula Deen's recipe, tried and true! Smoked Sausage Jambalaya So very good, so Louisiana style good. You are not going to believe how easy this dish is to prepare. Serves: 6 Cook Time: 30 Minutes Smithfield Product: Dinner Sausage Ingredients 1/2 pound Smithfield Smoked Sausage, cut into 1/4-inch slices 2 1/2 cups water 1 (14-ounce) can diced tomatoes 1 (8-ounce) can tomato sauce 1 bay leaf 3 tablespoons dried minced onion 1 teaspoon dried thyme leaves 1 teaspoon garlic powder 1 tablespoon dried parsley flakes 1 teaspoon cayenne pepper 3 beef bouillon cubes, crumbled 1 teaspoon salt 1 cup long-grain rice 1/2 to 3/4 pound medium, fresh shrimp, peeled and deveined. Steps In a Dutch oven add water, tomatoes, tomato sauce. Add dry ingredients, smoked sausage and rice. Bring mixture to a boil over medium-high heat. Cover, reduce heat and let simmer for 20 minutes. Add shrimp and cook for an additional 5 minutes, or until shrimp are pink. You do not want to overcook the shrimp. A tip from Paula: Never cook the shrimp before you add it to the jambalaya. You want all of the wonderful shrimp flavors to cook into your jambalaya and cooking it before would make the shrimp overcooked (rubbery). Shrimp cooks so quickly, it is best to add it at the last few minutes.

What wine with Chinese food? Maybe beer??

Just saw this or I would have posted earlier. There was a Chinese guy in Manhattan who was a wine freak - was on a mission to show that wine worked w Chinese food. Great restaurant and great wines. He finally sold his place (Henry's, on 1st Ave) and moved to Napa to open a restaurant. You did well. Problem w much Chinese food is the salt levels - soy sauce, fermented beans, etc. So reds, especially tannic reds, can taste really wierd. Cantonese tends to be lighter with a lot of seafood, so I would go with whites. People recommend gwertztraminer - OK I guess, but chenin blanc, sauvignon blanc, and some others work better. I would avoid anything that has noticable oak and instead look for something with light, crisp flavors and lots of acidity. Riesling can be perfect as it comes in so many guises.

Followed this recipe but left out the bacon and the sugar, then added garlic. I used sweet Italian sausage, if you use hot sausage it is not as good since the spices overwhelm the other flavors. Zuppa Toscana at home I made up a salad of finely chopped lettuce, snow peas, carrots, and celery, and thin sliced red onion - all stuff languishing in my fridge. Made up light olive oil and rice wine vinegar, s&p for the dressing. And, I found a recipe for 30 minute dinner rolls since all the homemade bread disappeared into stuffing. Buttered and dusted the tops with salt and garlic powder when they were finished baking. Thanks for your suggestions - sometimes the brain doesn't get into food gear when other stuff is forefront.

The only reason I’d try sous vide is that the dogs would marinate in their own juices (“purge” is what the cool kids call it) and then get grilled with a coating of that liquid, which I could also reduce down and spice up for a glaze . . . I did about 30 lb of ribs for a party last year. Sous vided in gallon freezer bags with aromatics, salt, sugar, spice, all bags hanging in a cooler that I’d prefilled with hot water. if They spent 12 hours under sous vide, then when I got an “order” for ribs I just grabbed a bag and grilled for ten minutes. This worked well with my limited grill area. I might try similar with the dogs. Hmm, will have to plan the right soundtrack. To pay homage to the Top Dog of my college days, it would be Jimi Hendrix, Grateful Dead, Neil Young, Talking Heads, Steely Dan, Elvis Costello, Pretenders, and the other stuff we were listening to then. I was a Top Dog regular again in 1997-1999, when I returned to Cal for grad school. Things were different, Telegraph had been taken over by chain stores and bubble tea shops, most of the bookstores were gone, only one record shop left, maybe one head shop. The college kids, and they were kids to me, looked a lot more serious and strained. Not so much free spirited kids with sandals and philosophy books. The average kid was an Asian teen, humping a huge backpack of books like a Marine on patrol, grimly trying to maintain a “B” average against 30,000 of the smartest kids in the world. Top Dog was a little bit of the Berkeley of my youth, but I wasn’t. One night a friend and I went to Top Dog, it was about 1 am, we were both in tuxedos, someone called me “sir”, I felt old and gray :-(

Ohhhh, you mean food! I was going to suggest a Belgian style pale ale or a Bock Lager. Silly me. Then if it is food you want I would roast up sweet potatoes, regular potatoes and some onions in olive oil with seasonings. Rye bread is a good suggestion by Annie. Love rye with sausage. NancyLouise

I kind of went a different direction. Got too busy to check back in before time to cook.

Braised the sausage in beer. Sweated some onion, garlic, celery and bell pepper. Removed the sausage, added the veggies and some tomato powder, worcestershire sauce, sweet balsamic, mustard, sugar, etc. to make a chunky BBQ sauce and served with roasted potatoes and broccoli salad.

Yum.

Stuffed.

Thanks for all the suggestions, I'm sure there's more sausage in my future!! :-)

The next time I make sausages, I'm making this recipe posted on the Cabbage Cook-a -long. It really grabbed me as the perfect accompaniment to assuages.

Haluski (Pan-Fried Cabbage and Noodles)
Servings: 4

4 cups wide egg noodles
8 TBSP butter
2 cups sliced onions, about 1/8 inch thick
6 cups cabbage, sliced thin
Half teaspoon salt
pepper

Directions

Cook egg noodles according to package directions, then drizzle with a bit of oil to prevent the noodles from sticking together and set aside.

While noodles are cooking, melt butter in large deep skillet over medium-low heat. Add onion and saute, stirring occasionally for about 5 to 10 minutes, or until softened and just beginning to turn golden.

Add cabbage to skillet, stirring well to incorporate with onion, and saute for about 5 minutes, stirring occasionally.

Cover, reduce heat to low, and let simmer until vegetables are soft. Turn heat back to medium, add cooked noodles, salt and pepper, and stir well until noodles are heated though.

Adjust seasoning if necessary and serve hot.

Oh, that DOES sound good! I'll be trying that one for sure!
