A tasty way to use up your cherry tomatoes!

Grilled Chicken Breasts with Sun-Dried and Fresh Tomato Salsa (Fine Cooking)

8 oz. small red and yellow cherry tomatoes, halved or quartered, depending on size
2 Tbs. chopped drained oil-packed sun-dried tomatoes
2 tsp. drained capers (roughly chopped if large)
1/2 tsp. minced garlic
1 Tbs. sherry vinegar
2 tsp. lightly chopped fresh thyme leaves; plus sprigs for garnish, if you like
3 Tbs. plus 2 tsp. extra-virgin olive oil
Kosher salt and freshly ground black pepper
2 large (6 to 8 oz.) skinless, boneless chicken breast halves, rinsed and patted dry, tenderloins removed, butterflied

In a small bowl, combine the cherry tomatoes, sun-dried tomatoes, capers, garlic, sherry vinegar, 1 tsp. of the thyme, 3 Tbs. of the olive oil, 1/4 tsp. salt and a few grinds of pepper. Set aside, stirring occasionally to let the flavors combine.

Heat a gas grill to high.

Put the chicken in a shallow nonreactive pan or plate. Rub the chicken all over with salt (about 1/2 tsp. for each piece of chicken), a few grinds of pepper, and the remaining 1 tsp. thyme. Drizzle 1/2 tsp. olive oil over each side of each piece of chicken and rub all over.

Lay the butterflied breasts on the hot grill grates and cook, covered, until the chicken has grill marks, 1-1/2 min. Rotate the breasts 90 degrees (to get a crosshatch of grill marks) and continue grilling until grill marks form, another 1-1/2 min. Flip the breasts and cook the second side in the same way but for a little less time, grilling for 1 min. in one direction and 1 min. in another, until cooked through.

Transfer the breasts immediately to two warm serving plates, stir the tomato mixture and spoon equal amounts (it will be a generous portion) over each piece of chicken. Garnish with a sprig of thyme, if you like.

This sounds like chocolate-dipped strawberries. Laurel, your pie sounds nice and light for these hot days.

STRAWBERRY NUTELLA TART W/GRAHAM CRACKER CRUST (Foodgawker)

For the crust:
1 1/2 cups graham cracker crumbs
3 tablespoons natural cane sugar
5 tablespoons unsalted butter, melted

7 oz. Nutella (half a standard jar)
2 cups sliced strawberries
2 tbsp. coarse sugar, such as demerara (don't have this obviously, so I'll just use reg. sugar)

Preheat oven to 350°F and lightly grease a pie plate. Stir together the graham cracker crumbs, sugar and butter. When evenly combined, transfer the contents to a pie plate and press onto the bottom and sides of the dish. Bake for 12 minutes or until the shell is crisp. Remove from oven and let cool completely (about 30  45 minutes). After itÂs cooled, gently spread the Nutella in an even layer.

Arrange the strawberry slices in consecutive circles on top of the Nutella. When youÂre just about to serve, dust the top of the pie with the coarse sugar. Serves 8.

Cheese Danish from scratch

Dough
3/8 c milk
3/8 c water
1 egg
3 c all purpose flour
1 tsp salt
4 TBL butter
1/3 c sugar
1.5 tsp yeast

Mix all dough ingredients together. Let rise for 45 mnutes, then roll out on a floured surface into a 10" X 14" rectangle. Grease a 1" X 15" jelly roll pan or baking sheet with edges. With a knife score the dough in 1" strips down each side of the dough, leave a 3" strip alone in the middle. Spread fruit preserves and a layer of cream cheese down the middle. Start criss crossing the 1" cut strips back and forth over the top of the filling. Cover with a towel in a warm oven and let rise for 1 hour. Bake @ 350 for 25 minutes.

Icing
1/2 c confectioners sugar
2 TBL milk

Mix icing and drizzle over the slighly cooled cheese danish. Sliced almonds or pecans can be sprinkled over the icing. Enjoy! and yes....I make this often, it never fails!

Brownie SÂmores Pie
Ingredients:- 2 graham cracker pie crusts
- 2 cups semi-sweet chocolate chips
- 1 package brownie mix (prepared)
- 1 package mini marshmallows

Brownie SÂmores Pie Directions:- Preheat oven to 350 degrees.
- Line the bottom of each pie crust with 1 cup chocolate chips.
- Pour 1/2 of the prepared brownie batter into each pie crust.
- Bake approximately 25-30 minutes (check with a toothpick or fork).
- Cover pies with marshmallows and place under broiler for about one minute (until marshmallows get toasty).
- Enjoy!

Yields two pies.

Here's a delicious pie for the hot weather. I make it often.

Orange-Ice Cream Pie

1 3-oz pkg orange jello
1 cup orange juice
2 cups vanilla ice cream, softened
1 can mandarin oranges, drained
1 graham wafer pie crust

Bring orange juice to a boil and dissolve jello powder in it. In a blender or food processor, blend the ice cream and orange juice. Pour into graham crust. Let set in the freezer until firm and top with mandarin orange slices.
