What's for dinner Sunday?

We're having all leftovers to clean out the frig. Ribs from last night, that were fall-off-the-bone sticky wonderful, potato salad made with a vinagriette instead of mayonnaise and beet salad. Harry bought root beer so I think we'll have root beer floats for dessert.

I just gotta get to the store tomorrow, were out of everything, so were having pancakes and sausages.

Pork Chops, Baked Sweet Potatoes, Green Beans, Cantalope and Choc Brownies for dessert. Just changed my mind...gonna make Sweet Potato Fries lol

I'm late with this but thought I'd share anyway. I've been turned on to the low and slow method of cooking. So far I've done french dip sandwiches - bottom round roast and yesterday we did a fresh chicken. The concept is to cook for hours at low temperatures. So far I've use 170 degrees. The meat temperature never rises about 170. We did the bottom round for just a bit too long. I should have gotten it out when the temp read about 150 so it could rest for slicing. Yesterday's chicken on the other hand, so good. All I did was salt and pepper the inside/outside the night before and left in the fridge over night. In the morning I took it out about an hour before cooking. I cranked the oven to 500 to crispen it up then dropped it down to 170 for about 6 hours. I did baste it with olive oil, rosemary and thyme and stuck some lemons in the cavity. It was the juiciest chicken I've ever done and so flavorful. Broccoli and garlic mashed tatoes along with a wilted lettuce salad with hot bacon dressing. Leftovers for lunch today.

Shirley, that coney dog is calling me! Glad the snow and ice are gone so you can get out and about! Jasdip, did your team win? I haven't been keeping up with the Olympics. My bad! I had 5 large baking potatoes that needed to be used so I made them into twice-baked potatoes. Baked the potatoes, scooped out the pulp, mashed it with butter, milk and sour cream. Added shredded cheddar, sliced green onions chopped parsley and some chopped bacon. Topped with more cheese and bacon. Put them on a cookie sheet and they are in the freezer before being stored in bags and run through the Food Saver. They sure look pretty! Sue, glad you are able to get out again. Lunch sounds great. Little Alyssa will soon be a 3-year old. It's a great age. I've never had Captain D's but it looks a lot like Long John Silvers. Glenda, I really like Thai coconut soup, but the rest of your meal sounds even better.

It has been another full and busy day. I fixed food to go with grilled hot dogs and hamburgers and we took it all to Amber and Mike's. I took corn on the cob, baked beans, fried potatoes, coleslaw, a cake and the meats. Awhile after eating we came home with Cheryl, Kevin and Alyssa. I have been outside all day since our dinner. My supper was just a fried egg, buttered toast and hot tea. It was a late supper for me. May have bad weather move in tonight. I hope your hubby does well Sherry. Will add him to my prayers. I've lurked a long time and have just begun to post a bit. I admire the way you are dealing with your health challenges. I'm a breast cancer patient and can certainly empathize. I'm lucky that my husband is healthy, but not always helpful. Dinner for us is one gorgeous, homegrown beefsteak tomato on BLT's with tomato and roasted red pepper bisque.

I have a roast braising in the oven. Potatoes, cabbage and carrots left from last night's corned beef dinner will accompany it.

A pecan bar. I was going to have the last of the white gazpacho but when I went to have it DH had already finished it off. Guess I'll have a bowl of fruit for dessert since the pecan bar was dinner. LOL

The kids (Alex and Lauren) had chicken strips from Dairy Queen, Maria at her her boyfriend's house tonight. Was hoping to leave at 4 from work today and make dinner. It was my 8 hour day but with 2 of us having 8 hour days, one of us had to stay so I volunteered since I swapped days with someone else so I wouldn't have to do 5 in a row later next week. I asked to leave at 7, though and they let me go. Came home with dinner and am now making tomorrow's dinner so they don't have to eat junk food again. It's pork curry and rice.
