I had a yen for cucumber/sour cream salad

So I mixed up some this morning, I sliced the cuke & onion real, real thin, on a mandolin, mixed up some plain sour cream with some dry ranch dressing mix. Stirred in the cuke & onion. I can hardly wait for dinner time, which will be Chicken Kiev, baked potatoes, green beans and sliced tomatoes, along with the highly anticipated cucumber salad. Whatcha all havin'. Dottie

When I get to craving a cucumber/sour cream salad, I go to my favorite Chinese buffet. Always get me a saucer full!

hmmmmmm, maybe that's what I'll go for tomorrow!

I had the same challenge last year. I too used a favorite refrigerator pickle recipe that turned out less than fabulous. I ended up using them fresh until the season ended. The really nice thing is they came in well after all other cukes were done. (Direct seeded on the same day.) I grew mini whites too! I really enjoyed them. Unfortunately, I felt they came on all at once then faded all at once. Pretty short harvest for me. I'm growing Edmonsons this year. They are great picklers. Erin

Excuse ME, I posted the wrong recipe. Had to do a search and THIS IS THE ONE! It's wonderful!! Sour Cream Coffee Cake (have made this many times) 1 box white cake mix 1 box instant vanilla pudding 8 oz. sour cream 1/2 c. vegetable oil 4 eggs Mix all ingredients together at once. Beat AT LEAST 5 minutes - DON'T UNDERBEAT! Topping: 1 cup granulated sugar 1 cup chopped walnuts 1-1/2 heaping teaspoon ground cinnamon 1-1/2 heaping teaspoon cocoa Preheat oven to 350 degrees F. Butter and flour a 10" bundt pan. Put half of the batter in pan and sprinkle with half the topping. Add the rest of the batter. Sprinkle the rest of the topping. Cut through well with knife so that topping is mixed with the batter. Bake 1 hour. Cool 10 minutes before turning out.

I typically do make a cucumber feta salad, and I add cherry tomatoes for mine and leave them out for Kevin. I guess I missed Grainlady's recipe because it was grayed out. Her recipe is similar to mine except that I add fresh dill to mine (I have plenty in the back yard) and use red onions instead of green onions. I have plenty of chives in my yard also, and so I might add some of those. It's getting to the time of year when I have to move the dill to shadier parts of the yard so that it will not go to flower so quickly. The same is true for parsley and cilantro, although cilantro can handle the sun better.

Thanks for the recipes and suggestions, Kathleen and Linda. They sound good but were not quite it. I guess I'll just have to tinker with it till I can get the right taste. When I lived in Oakland, CA, I used to take the bus with a friend to a shopping center (I had no idea where exactly I was)and we would stop in at this little deli. They made what they called Danish potato salad and used a sour cream mixture very close to this recipe, with the onions and cukes, as the dressing for the potatoes. Sprinkled celery seed on top. Oh, it was good! I've Googled for that as well, and found something similar on Recipeczar, except that the recipe called for green beans instead of cucumbers/onions and there was brown mustard in the recipe, which I know my original recipe didn't have. Isn't it funny how simple little recipes like this can get lost over the years? Everybody, back in the 1980's, was trying all the "new" recipes that Kraft would print in their advertisements in the magazines we bought. I guess I'm just getting old. I can remember when Lipton onion soup mixed into sour cream to make dip was a "new" idea. LOL!

Oh that sounds yummy! I make mine with just sour cream, a pinch of sugar and a bit of red wine vinegar or rice vinegar. And just cuke, sliced thin. I could do for that! I might make some to go with Woody's buffalo pot roast tonight, which I am not in the mood for in this hot weather.

That sounds good.Don't have a cucumber or I'd make some.I don't care for the onion in it either.We are having Carne Guisada and rice with tiny pieces if thin spagetti mixed in.Kinda like rice a roni but made from scratch.Maybe some garlic green beans,haven't decided yet.I have a version of fruit cocktail cake in the oven but made with crushed pineapple instead of the fruit cocktail.Smelling good in here.I had to argue with myself about baking the cake because it's so hot in here.As you can see the sweet tooth side won!LOL

That is one of our favorite salads. I slice the cucumber and onion very thin, then salt them and let them set for about 20 minutes and drain. Then add the sour cream, a pinch of black pepper and a shot of red wine vinegar.

Growing up we had cucumber/onion sour cream every night with our dinners. My Mom would use a little white vinegar. I bed it tasted good with the Ranch dressing. I'll have to try it next time.

I had left over pancakes for dinner.

I made sloppy joes on toast. Target had ground chuck for $1.49 a pound and it's great meat. I have some country style ribs thawing in the frig for either Monday or Tuesday.

I made this recipe and took to the church dinner, yesterday. This is our favorite cucumber salad.

CUCUMBER SALAD

5 cucumbers, sliced
1 sm. onion, sliced
1 tsp. sugar
Salt
Pepper
1/4 c. Miracle Whip or mayonnaise

Place cucumbers and onion in bowl. Sprinkle sugar, salt and pepper over cucumber mixture. Combine with Miracle Whip or mayonnaise. (I use Miracle Whip)

I make a similar salad with cuc's and onions except I use cream instead of mayo. Yummy. Now I have a craving for it. Thanks guys.

I make this quite often, but it's at its very best with cukes right out of the garden. My kids say that their favorite salad from childhood (and they still love it), is simply cukes and tomatoes chunk-size, with mayo.

I had a lettace wrap with Chive & Onion Cream Cheese, and Turkey. Love it. I was out of Cucumber or I would have had that with it.

... there's a whole bunch of people with a lot of yen, over there.

I'm not sure just how much cucumber or sour cream, or salads, fit into that scenario, though ... sorry.

The batch I made on Sunday lasted 2 1/2 days, and had to wait until I went to the store today to buy more cukes and onions, to make another batch, Yum

Lol Ole Joyful, guess there are different kinds of 'yens' my son's widow went to Japan to visit her son living and working there, and he told her that after existing on Ramin noodles all through collage, he was disappointed to find that, that's what they eat over there. Dottie
