The Kitchen Table

Grrr, I have misplaced the recipe for sour cream coffecake.

A couple of weeks ago I was asking how to use the sour cream I had and someone posted a recipe for sour cream coffeecake which was excellent. I want to make it again and I can not find in my file. I went back on the Kitchen Forum too but must have missed it or didn't go back far enough.

Here's the one my mom made:

SOUR CREAM COFFEE CAKE

2 c. sugar
1 c. butter
2 eggs
1 c. sour cream
1 tsp. vanilla
2 c. sifted cake flour (can use regular flour)
1/4 tsp. salt
1 tsp. baking powder

Cream butter and sugar. Add eggs and blend well with electric mixer. Fold in sour cream and vanilla. Sift dry ingredients together and add to creamed mixture. Do not overmix.

Topping:

NOTE: Use 1/2 the topping for the middle of the batter.

2/3 c. brown sugar
1 c. nuts, chopped (pecans)
2 tsp. cinnamon

Preheat oven to 350 degrees. Spray bundt pan. Sprinkle 1/2 the topping on the bottom of the pan. Add 1/2 the batter. Sprinkle remaining topping on batter and top with the rest of the batter. Bake 55 minutes. Don't overbake.

Just catching up on this post - and noted I failed to answer bonicarose question about the granola bars. Yes - I use dried fruit - any that I happen to have available. One thing I noted - the bars are best made with dried granola (which I have for breakfast anyway), rather than the original recipes for using the oats as it comes from the box. The oat recipe turns the bars quite hard - whereas, if dried oats (as in granola) keeps the bars from baking too hard. Also don't pack the mixture in the pan too hard before baking. (Ye gads, learn something new everyday). My pantry is quite bare, with filled jars being replaced by many, many empty ones - mostly all my summer fruits in simple syrup - nectarine, apple, peach, pear, plum - now almost all gone (sob!). The freezer, tho - now that is different - it is so loaded that I can hardly squeeze any more in it. No snow - yet - (rain forcasted) - eating stir fries and lots of green salads. Planted quite a few onions and garlics that are coming along well. Never enough - and so must supplement cooking onions before the season is over. My chardonnay grapes arrived today (ordered in Dec) and now today's project is to get em in - hopefully will grow on a south-facing arbor - should be an ideal spot. Three other grapes - Thompson is one, the others shall remain nameless -are doing quite well - about 3 years old, and my first lesson on how to prune them (hope I didn't kill the poor things). Must can more fruit next year (then hide it!) Bejay

Here are some I've made in the past: CUP OF CHAI 1 cup green cardamom pods 1 cup chopped cinnamon 1 cup chopped dried ginger 1/4 cup dried orange peel 1/4 cup whole cloves 1 tablespoon whole black peppercorns Combine ingredients. Store in an airtight container. To use: Measure 1 heaping tablespoon per cup of water and simmer 20 minutes. Turn off heat, add 1 teaspoon of your favorite black tea; steep 5 to 10 minutes. Strain and sweeten to taste with honey and milk. Makes about 3 cups chai tea blend. Recipe from The Kansas City Star newspaper  12/12/01. BLACK FOREST COOKIE MIX 1/2 cup dried cherries, coarsely chopped 1/2 cup chocolate morsels 1/2 cup chopped walnuts 1/2 cup brown sugar 1/2 cup sugar 1/2 cup unsweetened cocoa 1 1/2 cups all-purpose flour 1/2 tsp. baking soda 1/4 tsp. salt Layer the ingredients in a 1-quart jar in the order listed. Attach a gift card with the following instructions: Beat 2/3 cup butter in a mixing bowl until light and fluffy. Stir in the black forest cookie mix, 2 eggs, and 1 tsp. cherry or vanilla extract. Drop by tablespoonfuls onto a greased baking sheet and bake in a preheated 325° F. oven for 14 to 16 minutes. Cool on a wire rack. Makes about 2 dozen. And here are some dip mixes I've given too: Habañero Spice Blend: Stir together 1/3 cup onion powder, 3 Tblsp. salt, 4 tsp. dried oregano, 4 tsp. dry mustard, 4 tsp. sugar, 2 tsp. habañero powder, 2 tsp. garlic powder, and 2 tsp. ground cumin. Makes about 1 cup. Chipotle Spice Blend: Stir together 1/3 cup onion powder, 3 Tblsp. salt, 4 tsp. sugar, 4 tsp. smoked jalapeño flakes, 4 tsp. ground cumin, 4 tsp. dried thyme, and 2 tsp. ground coriander. Makes about 1 cup. Jalapeño Spice Blend: Stir together 1/3 cup onion powder, 3 Tblsp. salt, 4 tsp. sugar, 4 tsp. jalapeño flakes, 2 tsp. ground coriander, and 2 tsp. dried oregano. Makes about 3/4 cup. Curry Spice Blend: Stir together 1/3 cup onion powder, 3 Tblsp. salt, 3 Tblsp. curry powder, 3 Tblsp. ground cumin, 4 tsp. dried thyme, 2 tsp. freshly ground pepper. Makes about 1 cup. To make dip: 1 8 oz. container dairy sour cream 2 Tblsp. mayonnaise 1 Tblsp. desired spice blend (from above)

My thanks to Westelle for tipping me off to this post. I was quite excited to find fresh cakes of yeast at the grocery store yesterday. My recipe is very similar to the one Westelle posted except mine calls for fresh yeast. I got this recipe about 45 years ago from my husbands Polish aunt. Not sure if it is a traditionally Polish item but it was a family favorite. This recipe is more like a miniature pastry than a cookie and are best when served when fresh. I usually bake off part of them and keep the rest refrigerated for a week or so and bake them as I need them. BUTTERHORNS DOUGH INGREDIENTS 4 c flour 1 ý c butter 2 oz square of yeast 3 egg yolks 1 c sour cream 1 t vanilla Dash of salt DIRECTIONS FOR DOUGH Cut butter into the flour and then crumble the yeast into it. Combine until butter and yeast are no longer noticeable. Add the remaining ingredients and mix thoroughly. Separate the dough into 8 equal balls, wrap in plastic wrap and refrigerate for several hours. Roll each ball out to about 10 to 12 inch rounds. Cut each round into 6-8 wedges, depending on the size you prefer. Put a teaspoon of filling (recipe follows) onto each wedge and roll from outside edge to center point. Place point-side down on greased baking sheet. Bake at 350 for 20 minutes. (NOTE: When rolling out the dough you can use powdered sugar on the board instead of flour to prevent sticking.) FILLING INGREDIENTS 3 egg whites 1 c sugar 1 c chopped walnuts DIRECTIONS FOR FILLING Beat egg whites to soft peak stage. Gradually beat in sugar. Beat again until stiff. Gently fold in finely chopped nuts. If desired the butterhorns can be frosted with a powdered sugar and milk frosting when cooled.

I posted this on another thread but I think it is worth reposting here, chocolate is ALWAYS good! CRUNCHY FUDGE SANDWICHES 1 cup butterscotch morsels 1/2 cup peanut butter 4 cups Rice Krispies 1 package (6 oz.) semi-sweet chocolate morsels 1/2 cup powdered sugar 2 tablespoons butter or margarine, softened 1 tablespoon water 1. Melt butterscotch morsels with peanut butter in heavy saucepan over very low heat, stirring constantly until well blended. Remove from heat.( I melt this in the Microwave, 3-4 minutes on high, stir and continue another minute or so until melted) 2. Add RICE KRISPIES cereal to butterscotch mixture, stirring until well coated. Press half of cereal mixture into 8 x 8 x 2-inch pan coated with cooking spray. Chill in refrigerator while preparing filling. Set remaining cereal mixture aside. 3. Combine chocolate morsels, powdered sugar, butter and water. Stir over very low heat until chocolate melts and mixture is well blended.( I do this in the microwave also) Spread over chilled cereal mixture. Spread remaining cereal mixture evenly over top. Press in gently. Chill. Remove from refrigerator for about 10 minutes before cutting into squares. ~~~I usually double this recipe as everyone LOVES it and make it in a 13x9 pan.~~~

Excuse ME, I posted the wrong recipe. Had to do a search and THIS IS THE ONE! It's wonderful!!

Sour Cream Coffee Cake (have made this many times)

1 box white cake mix
1 box instant vanilla pudding
8 oz. sour cream
1/2 c. vegetable oil
4 eggs
Mix all ingredients together at once. Beat AT LEAST 5 minutes - DON'T UNDERBEAT!
Topping:
1 cup granulated sugar
1 cup chopped walnuts
1-1/2 heaping teaspoon ground cinnamon
1-1/2 heaping teaspoon cocoa
Preheat oven to 350 degrees F. Butter and flour a 10" bundt pan. Put half of the batter in pan and sprinkle with half the topping. Add the rest of the batter. Sprinkle the rest of the topping. Cut through well with knife so that topping is mixed with the batter. Bake 1 hour.
Cool 10 minutes before turning out.
