I am making skillet smoked sausage, potatoes and onions. We went to the farm store this weekend and I got fresh baby red potatoes and onions right from their farm. The tomatoes are to die for, I have been enjoying BLT sandwiches!

I like the sounds of the previous meals posted. Sounds awfully good to me.

Mine is creamed potatoes and peas, and a chicken patty.

I am meeting a couple of friends at Ruby Tuesday for dinner. Im thinking a baked potato and grilled zucchini and salad bar. Of course I could certainly change my mind. I really like their salmon. Im sure it will be good no matter what I order.

Satine, happy you feel good enough to have a nice evening with friends. Enjoy your evening. They used to have an all vegetable platter that had a nice array of vegetables---actually cooked though rather than those tough old hard half-cooked things you usually get these days.

I played bridge today. This morning I made some rice so I could make shrimp and pork fried rice tonight. While I was out and about, I picked up some hot and sour soup to go along with the fried rice. That's what's for dinner tonight.

chicken breasts, stuffed with Italian sausage, pepperoni and mozzeralla cheese and wrapped with bacon. They are in the oven now, and smelling pretty good. I made some baked potatoes a little different. 1/2 cooked them in the microwave, then sliced almost all the way through horizontally about 7 times, drizzled with olive oil, a little melted butter, salt and garlic powder..

I was so happy to cook a roast chicken one day last week. Then I'm at a loss what to do with the leftover meat! It seems that I run into some recipes that sound good, then I can't remember what they were or where I put them.

I ended up by making a chicken pot pie last nite, using a biscuit topping. I just used my biscuit recipe. Hubby absolutely loved it, and we're having more of it again tonite. That should finish it. Not sure what to do for dessert. I have to start planning for dessert, I can take or leave it, and never think of making anything for dh.

For dinner it was a easy one, we had sandwiches
We did not get home till late. At least the rain held off so the ride was not that bad.
I got a steroid shot in my knee, just hope it helps a little. Most times these shots do not help me. I will have my surgery Aug 26th

Georgysmom, what a good idea to stop for soup to go with your fried rice. I'll have to remember that tip.

Jean, what a dinner! Let us know how the potatoes turned out--did you finish them in the oven? That's a lot of stuffing for your chicken and I bet it's going to be delicious.

Jasdip, did you make individual biscuits to put on top or jay the dough across the whole top? Fruit is always a good thing for dessert--especially in summer when so many good ones are in season.

Mary, glad the rain stayed away and I too hope the shot will help. It's great you finally have a date for your surgery. You'll feel ever so much better.

My across the street neighbor goes salmon fishing....caught one yesterday around noon and it is being eaten tonight.
I am so glad they share.
