What's for Dinner.....Monday edition?

I'll be heating up the leftover sloppy joe sauce I made several days ago and stuck in the freezer. I'm thinking that some slaw or cucumber salad will be good with the joes.

What will be or has been your main meal today?

Thanks for starting the dinner thread!

I've got a skillet of un-cabbage rolls cooking on my little induction burner. Hamburger, cabbage, rice tomato sauce and rotel tomatoes simmering. Shredding some cheese on top at the end. Can't wait!

Mwheel, stew always tastes better the second day to me anyway, and you don't have to worry about tomorrow. Plus the pineapple chicken sounds really good, so you have a win-win situation! Phyllis, I've led such a sheltered life! I have no idea what lutefisk tastes like, but it sounds like something made with fish??? I'd be like you and take home some meatballs. I know what those are :-) We ended up having a breaded whitefish that I found while rummaging in the fish department of the freezer. It needed to be used before the tilapia. It was good, though. I need to make a big batch of rice and put it into 1 c. portions so when we want rice, it's ready to go. Love that Food Saver. We really like basmati rice. Hounds, I've never had a fish taco, but they sure get rave reviews. What do you put on yours? I mean, is it the regular lettuce, salsa, cheese type taco or something all together different? Is the fish baked or breaded and fried? And, again, I didn't know what scrapple was, but it didn't sound so good. Yours Nicole, sounds delicious. Sure wish I had a taste of your cherry cheesecake. Yum! Maryc, what a great idea for a crust your neighbor can eat. I'll have to remember that when Harry's daughter visits in April. She gave up gluten for some reason. Stacey, chicken and rice is so good. I really like chicken and yellow rice best, though. And my mother made a killer chicken/rice soup. Gosh, you made me hungry all over again. Stacey--I will cut back on the sugar next time I make it. I put in 1/2 c. packed brown sugar--maybe it wasn't supposed to be packed. Told Harry it'd be good over waffles or pancakes, too. Kittiemom, I need to learn how to use our grill since Harry isn't able to anymore. Gas grills scare me. Don't know why gas stoves don't. Here we have this big nice Weber grill that is just sitting. Our SIL grills when they come--once a year. Anyway, your dinner is the perfect end to a holiday weekend. Enjoy! Jasdip, whew! I'm sure glad it isn't 30F. Sure is a hard year to garden. Never know what it's going to do. Sue, glad you finished before the storm. Bet you had lots of yummy food--as usual. Good that you didn't have any wind damage. Bengardening, I hate it when that happens. I did the same thing a while back, only in reverse. Thought it was ribs and it was pork chops. Georgysmom, you sure know the way to a man's heart!! No wonder he likes the table with all that good food on it. I was going to make your scone recipe this afternoon, but piddled around instead. :-)

Glenda, that's a lot of food, but with all 12 bringing a dish it doesn't take long to fill up a buffet. I'm surprised there were no desserts! Raven, everything sounds delicious. We ended up having sliced avocados last night because the mangoes weren't quite ready. Way to go, Jasdip. You're making space in the frig for more of your good cooking! Shirley, I looked for green beans in the grocery today and they were awful looking. I wanted green beans and red potatoes so bad!! Yep, I think we all love our leftovers and most of the time I think they taste better on day 2 (or 3).

I went to a cooking demonstration at the club tonight. Our chef was demonstrating making soups. We had an assortment of hors d' oeuvres for dinner....spanakopita, sausage stuffed pastry, grilled asparagus,,,, carrots and summer squash, assorted cheeses with croustades, assorted fruits and mini quesadillas. Everyone got a box with two soup samples to take home. The chef asks for eight volunteers to make the soups as he explains the ingredients. Everything is prepped ahead of time. The volunteers get to keep the chef hat and apron (I already have one). I was one of the judges and got a nice bottle of wine for that. All this for $15.00. It was a fun evening......and that is why I made potato salad for DH last night, so he could have a steak or hamburger tonight. Always thinking.

I had tuna noodle casserole. Baked a potato since the oven was on anyway. I like the skins when they're baked.

This week includes my annual "special day" (a secret!). Last nite started with parmesan shrimp, breaded shrimp, coconut shrimp, shrimp alfredo, baked tater, salad, cheddar biscuits. Guess where? Brought home enough in the box for two lunches! Tonite will be a pig out buffet. Normally $20, I squeaked it down to $5, and that was free. Dumbo still prepared too much food here. A Chocolate Cake, with creamy Chocolate frosting. BBQ ribs. Some hamburger patties. A big pot of Chili. Salsa and Avacado. No cooking the rest of the week. Anybody hungry?

OF, you'll have to tell us! Is it your birthday?

Looks like a lot of comfort food tonight, yum! Some of my favorite meals; I used to request tuna casserole for my birthday supper as a child. Of everything in the world I could have had, lol.

DH and I were both tired and had headaches after work. We went to a little Mediterranean restaurant nearby.

I was going to make something DH really likes, he left for work this morning with an improved but still swollen knee. And his work involves hiking. Then, being Monday or just my days in general, had lots of interruptions and the Italian style pot roast didn't get put into the oven.

It did go into the pressure cooker browned just a half hour ago and is done, now to make some pasta (dried, only have to boil in salted water) and a vegetable and get him fed ;)

Left over butter chicken I made on Sunday. I use the VH butter chicken sauce, add the browned boneless, skinless chicken thighs, fresh broccoli and simmer. I love butter chicken with chunks of pineapple so I add a can of pineapple chunks and instead of rice I add cooked bow tie noodle to eat on a cold night

We had boiled shrimp and boiled little red potatoes boiled in old Bay seasoning.
