What's for dinner Sunday?

Hope it's been a Happy Father's Day at your house. My dad's been gone over 20 years and I think we all remember our dads whether or not they're still with us. I smile every time I think about mine. So it's not a sad day at all.

I did the unbelievable this morning and cooked Harry breakfast. I had leftover quiche filling so I made him a spinach souffle :-), link sausage, fruit salad and an English muffin. Milk, too. He'd better not get used to THAT!

Tonight I'm making a marinated pork roast, gruyere potatoes gratin and corn casserole. For dessert, cannoli that I picked up yesterday. Those are a few of his favorite things--but then he has so few unfavorite when it comes to food--haha!

Well, if I had known in time I would have gone to your house! Harry's meal sounds yummy. We are having chicken fingers in a tempura batter, green beans, salad and rolls. No dessert in sight!

I hope Harry's happy with his Father's Day foods.

I made beef barley soup and had it for both lunch and evening meal. I had a meatloaf sandwich to go with tonight's, and finished up the red raspberries.

I'm late with this but thought I'd share anyway. I've been turned on to the low and slow method of cooking. So far I've done french dip sandwiches - bottom round roast and yesterday we did a fresh chicken. The concept is to cook for hours at low temperatures. So far I've use 170 degrees. The meat temperature never rises about 170. We did the bottom round for just a bit too long. I should have gotten it out when the temp read about 150 so it could rest for slicing. Yesterday's chicken on the other hand, so good. All I did was salt and pepper the inside/outside the night before and left in the fridge over night. In the morning I took it out about an hour before cooking. I cranked the oven to 500 to crispen it up then dropped it down to 170 for about 6 hours. I did baste it with olive oil, rosemary and thyme and stuck some lemons in the cavity. It was the juiciest chicken I've ever done and so flavorful. Broccoli and garlic mashed tatoes along with a wilted lettuce salad with hot bacon dressing. Leftovers for lunch today.

I roasted a small turkey yesterday and we wanted to have baked sweet potatoes. I've never baked sweet potatoes, I usually boil them along with white and mash them together. So I pricked the sweet potatoes, stuck them in the oven and later when I checked there was caramel pooled and stuck to my (thankfully) aluminum oven liner on the bottom of the stove. I cleaned it up then set the potatoes in a baking dish in the oven. When we were ready to eat there was caramel around the potatoes, but there was still lots of meat left in the potatoes and they were delicious. I can only assume that they don't need to be pricked before baking!

I've thawed a couple of boneless chicken breasts (I'll save a little of one for a soup for my lunch ala Raven) and plenty of fresh veggies for a stir fry. Robert will be my sous chef.....there will be lots of chopping and dicing and my hands are so sore from yesterday's pruning. He's using my mandolin, so let us pray. Let's see....green pepper, onion, garlic, fresh ginger, broccoli, carrots, Chinese cabbage, shiitake mushrooms, sugar snap peas. I'll season the brown rice with a little sesame oil.....so fragrant.

Sweet Betsy, that sounds heavenly. Enjoy! Mary, it would've been a good day to work outside here, too. Nice, easy dinner after all that. Raven, I dreaded going to the store because it's always so crowded at the first few days of the month. I was surprised that there wasn't that many people shopping (Publix). Hounds x two, I can almost smell your roast. Yum! LOL at your dogs! Sandie, it's a little too cold for me. I think you're further south though. I like the mid-80's best. But it is nice to turn on the oven for a nice roast. You have a very intelligent dog. She was getting you prepared for today :-) Shirley, I will forever appreciate a BLT--or anything with bacon--when I can eat it again! Enjoy it for me!

Father's Day was good at our house. Our daughter called early this morning before she went to work. We got to talk to all the grandkids. Since our oldest daughter died her son is living with his Dad in FL & he just called which was nice.
It was BLT's for dinner as we were working outside today. Tomorrow I have a dr's appt for my knee. That is a 2 1/2 hr ride & they say 70% chance of rain, oh joy.

Shirley, your meal sounds so good. Harry would be thrilled if I made beef and barley soup. I tried it once but didn't like the recipe I used. Every once in a while he'll mention barley. I should make it again.

Mary, BLT's are a welcome meal on a busy day (or any other for that matter). Both our daughters called this afternoon, too. Harry was asleep when my daughter called but she said she'd call later. She was on her way out to do her weekly shopping. Good luck with your doctor appointment. Hope he has something encouraging to say.

DS and GS came for: Country lo boil, my version, with shrimp, smoked sausage, new potatoes, and fresh corn on the cob, plus Texas Toast.

Dessert: bestest peach cobbler that I baked while we were eating lunch

and requested by GS, his chocolate mousse dip with honey wheat pretzels for dipping

My DH was spoiled today too..... eggs, raw fried potatoes, smoked sausage and toast for breakfast. Chicken Tetrazinni and sweet corn for supper. I am ready for bed, lol.

I actually ate dinner tonight and sure enjoyed it. I had a piece of rotisserie chicken and a nectarine with a lemon ice for dessert. Hope all Dads had a wonderful day.

Pam, I wish you could've come, too. Heaven knows we'll be eating the leftovers for a while. I'm going to have to remember chicken fingers in tempura. I'd eat fried worms if they were in tempura batter. LOL!

Glenda, bet the boys were super happy and went home with very full tummies. Did you use a new peach cobbler recipe? It sure is good warm with ice cream melting all over it.

Hellion, I told Harry not to get used to it 'cause tomorrow is another day. :-) And I'm about ready to head for bed myself.

Satine, hurrah!! You actually ate. That sure is good news. You really had a hard time with whatever it was.

well it almost turned out ok..had a piece of top sirloin, and roasted in the oven (it was frozen) just not quite long enough for us on first check, so had to cook another 1/2 hour..perfect...did the usual sides, lol...
