What's for dinner Thursday?

It's been raining all afternoon. Sure happy to have it.

We're having the chicken stir fry with pineapple and green peppers over rice that we didn't have the other night for dinner. More of Glenda's cornbread, too. And, hopefully, the last of the strawberry pie.

Glad you are enjoying the wonderful cornbread!

I almost drove to Irondale Cafe today for lunch. They have the best fried chicken livers and freshly grated carrot salad.

Hartley's for my usual dinner for lunch: fried chicken breast, baby green lima's, and green bean casserole.

No bread!

If it isn't raining, grilling sirloin steaks and shrimp. Will have a tossed salad also

Lots of variety for dinner this evening! Shirley, I love days that have no interruptions. Even days that I plan to stay home and get caught up on things, there are usually reasons to head out or someone comes over. Stuffed peppers sure sound good! Pam a BLT is good anytime. That's usually what hubby orders when we go out for breakfast (he doesn't do eggs) Angela we had corn on the cob on the weekend and nuked it with the husks on. Have you tried that? OF we were in a store today and the Halloween stuff was out along with back-to-school supplies. Rhizo, I love the sound of your dinner every time you have that! B.e. peas I doubt I would like but that would be easy to leave out. I remember you said once it was a mix that you buy. Phyllis, eating frozen grapes made me smile, then I saw the radish sandwich. I feel sorry for you LOL. Maybe we should all send you a bit of our dinners, and you'd have a feast! KIttiemom, everytime I see you having shrimp scampi I want it. But we never buy shrimp. I'm going to have to just buy a bag of frozen ones once and for all and make it. :)

This won't be the healthiest dinner posted, but I've had about 30 interruptions today and I don't even have sheets back on the bed from this mornings laundry yet. Just sat down to do DH's invoicing, I'm having two Tylenol and a glass of iced tea. Asked DH, would you like bacon, toast and eggs, or do you want to grill hamburgers for us, and he said bacon and eggs ;)

Well, I woke up this morning and hubby had 2 pounds of ground beef and 1 pound of sausage thawing in the refrigerator. Cans of tomato sauce, diced tomatoes and tomato paste were on the kitchen counter next to the stove. I took a guess that was a pretty good hint that he was ready for another big pot of spaghetti sauce. We had a huge shrimp salad, spaghetti, and garlic bread.

Jasdip, we put a big pork butt on the grill over the weekend and enjoyed it with a pile of slaw. It's a full day commitment but seemed like a good Labor Day weekend project. Last night, I made a garlicky, gingery chicken stir fry with lots of fresh vegetables, served with brown rice and toasted almonds. I don't know why I don't make something like that more often, it's a favorite.

Some of the potato salad I had to make for a picnic tomorrow, cottage cheese, and a slice of Irish Brown Bread made today. Put a little peanut butter on it too.

Glenda, are you still losing weight? Is that why no bread? We have had another beautiful, sunny day 68-73 degrees. I think our weatherman must be losing his mind. He keeps predicting rain...Tom plays in a golf league on Thursdays with our son. Sometimes I go out with daughter in law and grandsons or I might fix something for my sister. Tonight I chose some alone time and fixed shrimp scampi with angel hair pasta and some black olives on the side.

Nope, no weight loss, but trying to curb some of my bread, PLUS my 55th class reunion is the 15th and I want my pants to fit.

Took the easy way out. Hubby loves hotdogs so we had hotdogs, coleslaw and a can of beans in tomato sauce!

Making sloppy Joes tonight.
We are having a downpour right now which we need and the temperature has dropped a lot. Big thunderboomers and lightening too, has my little dog curled in my lap hiding under her blanket.

DH and I both had lunch out with our respective foursomes so I took out some soup from the freezer. The label came off so it was a surprise. Turned out to be chicken soup and hit the spot.

Several of the kids were here this evening and we had hot dogs and hamburgers on the grill, baked beans, cheese,fried potatoes, corn on the cob, strawberries and yellow cake. Worked a little out at the garden afterward. I am ready for bed!

Stouffers Beef skillet......I think it's quite good, and so handy. I just pour out the amount I need and it's dinner in a short while. Had a slice of homemade bread with it.

Ratatouille with most of the ingredients from my garden. Used 2 of those cute little Japanese eggplants and dug about a half dozen red skinned potaoes to butter and serve with it. First time I had made it and we agreed it was a keeper. Focaccia bread out of the freezer...I love that stuff! Oh yeah, cucumbers and onions in sour cream. Cucumbers are doing well. Picked 4 so far and I expect the numbers will increase rapidly as well as the tomatoes.

I had a Reuben at Mel's Diner in Pigeon Forge. The girls are going to eat later here at the cabin, grilled cheese sandwiches and tomato soup...they wanted ice cream while I had my sandwich. Two had banana splits, one a chocolate sundae and the other a hot fudge sundae.

I keep telling myself to try ratatouille. I love the thoughts of all the veggies.

Jude, did you make yours in a skillet or in the oven? Was it still kind of tender-crisp, or cooked very soft? I'm not sure which is the right way.

Jasdip, mine was roasted in the oven and given the ingredients, it was all soft. Eggplant, zucchini, roma tomatoes, red bell pepper, garlic cloves and sprigs of rosemary and thyme. From what I've read, originally it was a way to use whatever was available in the garden. I think corn would be good in it too. I cut my eggplant too small and the recipe said to halve the romas and halfway thru I quartered them. The chunks of tomatoes were too big IMO. The side of buttered potatoes was a good thing, too.

Maybe I like ratatouille in my mind. :) I'm not sure all soft veggies would appeal to me.

Jasdip, if you like fried "stuff", breaded in cornmeal, try this combinbation. Slice some okra, cubed potatoes and a sliced green tomato, which I cut smaller. Toss it all in cornmeal with a little salt and skillet fry it 'til it's crispy There's something about fried cornmeal that always appeals to me.LOL
