What's for dinner Monday?

We did our grocery shopping and errands today. The heat was almost unbearable, so I was really glad I picked up fried chicken at the grocery and macaroni salad. You could smell that chicken the minute you walked in the door. I can't tell you the last time we had fried chicken. By the time we got home and got everything put away, I was wilted! I'll stick a couple of Pillsbury frozen biscuits in the oven, just to complete my "I didn't make anything" meal". LOL!

It's hot here, light meal in order....oriental shrimp and watermelon salad.

Warm and muggy here too.
I made the potato salad I posted a week or so ago, that uses oil, red vinegar, herbs and whole seed mustard. Delicious!
That, Asian coleslaw, hotdogs and that was dinner. We loved it. We are easy to please though! LOL

Glenda, I think tomorrow's tuna will be the winner. Is there such a thing as too much mayo? ;-) Oh Shirley, I hope that ice storm passes you by. Enough is enough. Your dinner sounds yummy. Ruthie, halibut is one of my favorite cold water fishes. Cod is another. A salad along side would be plenty for me. Mimi boo, what time do you want us to be there for dinner. You know, just a "few" of us from the KT!! Raven, you're doing well sticking with the low carb diet. Good for you. Harry loved that diet!! Gosh, Phyllis that soup sounds delicious. Does it have cheese in it? Mary, I don't know how you can plan and cook to separate meals most nights, but I sure admire you for it. Both sound good tonight. Jasdip, we had a holiday today also--President's Day. What was yours? Looks like someone besides me caught the cooking/baking bug! Love shepherd's pie and was just thinking about it this afternoon.

We just finished watching the first episode of this season's Blacklist and thought I'd check back while setting up for Castle. Shirley, here's the recipe. Easy-peasy and delicious! Pam, you could have been here, as usual I made enough to feed at least 1 more person! Oven Ã¢ÂÂfriedÃ¢ÂÂ chicken Preparation time: 15 minutes Baking time: 20 to 25 minutes 1/3 cup dry unseasoned bread crumbs 2 teaspoons sesame seeds 1 1/2 tablespoons grated Parmesan cheese 1/4 cup fat-free mayonnaise (not salad dressing mayonnaise) 1/4 teaspoon salt 1/8 teaspoon garlic powder 2 dashes cayenne pepper 1/4 teaspoon poultry seasoning 4 (4 ounces each) boneless, skinless chicken breast halves Cooking spray Preheat oven to 425ÃÂ°F. Place bread crumbs, sesame seeds, and Parmesan cheese in a large zip-top bag and shake gently to combine. In a small bowl, whisk together mayonnaise, salt, garlic powder, cayenne pepper, and poultry seasoning. Using a pastry brush, coat both sides of each piece of chicken with the mayonnaise mixture. Place chicken, one piece at a time, into the bread crumb mixture in the zip-top bag, seal, and shake to coat chicken well. Transfer chicken to a foil-lined baking sheet coated with cooking spray. Spray chicken evenly with cooking spray. Bake for 20 to 25 minutes or until juices run clear and chicken is no longer pink in the center. Yield: 4 servings

This week includes my annual "special day" (a secret!). Last nite started with parmesan shrimp, breaded shrimp, coconut shrimp, shrimp alfredo, baked tater, salad, cheddar biscuits. Guess where? Brought home enough in the box for two lunches! Tonite will be a pig out buffet. Normally $20, I squeaked it down to $5, and that was free. Dumbo still prepared too much food here. A Chocolate Cake, with creamy Chocolate frosting. BBQ ribs. Some hamburger patties. A big pot of Chili. Salsa and Avacado. No cooking the rest of the week. Anybody hungry?

Prairie Rose, do you barbecue all winter long, or was it because the weather was nicer today? Morz I love a well-done roast, and the slow cooker makes it easy. I also love cranberries in my salad. Have you tried them with roasted brussels sprouts? That's a favourite with us. Monica I made sweet potato fries last week and we loved them. The last time I tried baking them, they oozed out over my oven. I didn't realize they cooked so much faster than white potatoes. Rhizo, I love reading your dinner threads. You are so darn healthy! BLF, isn't it nice when a recipe from a fellow member turns into a keeper? Shirley, I wasn't sure if today classified as a "holiday" today (Family Day) so I made sure I roasted my vegetables before 5 pm to at least get the mid-rate hydro rate. I hate the smart meters. Moni, I add cheddar cheese to my broccoli soup. Probably negates any positive benefits of the broccoli, but it sure tastes good.

Potluck, today! 16 delicious dishes! Lots and lots of salads, one hot dish was squash casserole, chicken salad finger sandwiches, marinated shrimp with slaw, hot wing dip, and the BEST fresh sour cream blueberry bread. I had two slices, shhhhh! My addition was tomato aspic with compliments.

There was no way you could eat a little bit of everything.

Monica, that sounds refreshing! I got 1/4 a watermelon today so if Harry wants, we can have that, too.

Jasdip, isn't it strange how we eat so differently in the summer than winter. In the late summer, I can't wait for soups and stews and when spring hits, I'm so ready for all the delicious fresh fruits and vegetables. Today I found Rainier cherries. Now THAT is a real treat!

Glenda, 16 different choices for lunch?? Man, what a dilemma :-) Everything sounds so good, too. Do you have a luncheon every month? If so, start looking for apple butter, because those sandwiches sounded awesome!

potluck luncheons are 2nd Monday of each month, and when we don't have a hostess, we go to a restaurant.

I'm the organizer for the luncheons.

patti,you would love our group. Versatile group (40's-80's in age) from water aerobics and such beautiful homes we get to go to and enjoy the fellowship and great food :o)

DH has been asking for shrimp tempura for several days . Every night when I serve him something I grabbed from the freezer or leftover from the fridge (chili, taco salad, chicken soup, sweet and sour meatballs), he says, "I thought we were having shrimp tonight. I don't think I can get away with it anymore. LOL Tonight we're having shrimp and veggie tempura, despite the fact I played golf today and had lunch afterward. I was pretty good at lunch today. Just had a grilled chicken breast with a very small cup of pasta salad.

Glenda, that must be so much fun. What I like best is you had so much fun at you water aerobics that you wanted to get together outside of that. So cool!

Mary, I've never had pappardelle or fava beans, but it sounds good. Okay, confession, I had to look up to find out pappardelle is a pasta :-)

Georgysmom, you are a saint to make tempura for your DH after a day on the golf course. I would've ordered it out :0

Chicken kabobs on the grill - the following alternated on wooden skewers, brush with BBQ sauce.

-chciken (boneless, skinless cut into chunks)
-red onion
-yellow pepper
-fresh pineapple
-whole mushrooms

We are in the Columbia River Gorge Oregon. Wonderful weather 76 degrees with sunshine and a breeze. Tonight after sightseeing we had taco's and refried beans. Have enough veggies and meat to make a taco omelet in the morning.

We had beans and ham, boiled red potatoes, and cornbread. I love beans, but DH not so much, so don't have them often.
