I made Blackened Salmon on Monday and made sure to cook enough to use leftovers for Salmon patties so that is what we are having. I made cornbread and we are having some English peas from my freezer that I grew in my garden, fresh cream style corn that I put in the freezer, and a salad of tomato, onion, garlic and basil...from my garden....(there she goes bragging about her garden again...)

With broccoli and carrots.

Boneless country ribs cooking in the crockpot with plum/bbq sauce. Also going to grill some corn on the cob and have some french bread.

angelaid-- I haven't heard the term "din-din" since my dad died, thirty years ago!! Makes me happy to read it.

Tonight I'm making Indian food--spinach dal, fried okra and turmeric potatoes.

I don't know what I'm having for dinner because I'm going to a book club pot luck dinner. But I do know what I'm having for dessert - Banana Split Dessert!

Not much tonight for supper. Hubby is picking up something as he is coming home later from work. I fixed a ham sandwich and had a nectarine and some Crytal light orange drink.

A few days ago there was mention of Fried potatoes here. I haven't had time to do that until now. So I'm having fried potatoes and onions (Vidalias) and making cornbread and cooking some broccoli.

Can't wait to dig in.

Monica how do you make turkey croquettes? I also have leftover turkey. I cooked a turkey breast Mon. and we've had that for two days. There is probably enough left for croquettes and then turkey soup tomorrow. Pat

No real recipe, I don't use exact measurements.

Chop up the leftover turkey...if you have any jellied drippings or gravy left over, add some to the meat in a bowl. Set aside.

I make a white sauce...half and half creamer and flour over a low heat until it thickens. I make about 1/4 cup for about 3 cups of turkey....it's just for holding the turkey together.

Take the white sauce off the heat, and add some chopped onion or scallions, and sprinkle some sage.

Let sit for about 5 minutes, then add the turkey meat and some minced celery. Form the turkey into kinda football shapes, and coat with fresh bread crumbs.

I put them on a plate in the freezer for 15-20 minutes to firm them up...then into the deep fryer(or frying pan) until they are just golden. I finish them off with a couple minutes in the microwave to make sure they're well heated up.

Tilapia, baked potato, yellow wax beans, and beets.

There was a HEB Special. Buy 4 Filet Mignon Steaks for $10.00 and get "free" 4 baking potatos, shredded cheese, sour cream, butter and a 2 liter bottle of Orange Drink. Of course all HEB Brands.

The Filet Mignon's are small, but I'll cook them outside when it cools down a little more.

since i'm still sore, it was fish with my doctored up mac and cheese..instead of margerine, i use sour cream, add a bit extra milk and shredded cheese...

was so mad..i should know better than buy more than 1 salad dressing at a time...my blue cheese had expired! when it's just the 2 of us, i just can't use it fast enough...

I'd love to be having some of those peas and creamed corn from Ruthie's garden.

Unfortunately, in real life, I'm having pizza from Wal-Mart.

We had pizza too. Haven't had it in a while, though.
