Grape Salad
1 1/2 lb each red and green seedless grapes, washed and patted completely dry
Mix 8 oz each fat free sour cream(room temp), ff cream cheese until well blended.
Stir in 1/2 cup sugar/ or splenda and 1 tsp vanilla.
Fold in grapes until completely covered.
Spread into a large glass container.
Slightly brown 4 oz chopped pecans or walnuts, when cool stir into 3/4 cup brown sugar.
Sprinkle mixture completely over top of grapes and give it a gentle pat.
Cover overnight, with seran wrap and ENJOY!

ANCIENT FRUIT SALAD

This is an ancient Greek Recipe taken from the "Taste" Greek Magazine.

1 melon
2 peaches
2 pears
1 bunch of grapes
2 glasses Mosxato wine
1/2 cup peeled and chopped almonds
1/2 cup golden grapes
1/2 cup honey

Cut the melon in half and carefully remove the flesh and cut into small pieces. Mix the melon with the rest of the cut fruit, the almonds and the grapes and fill the melon skins with this mixture.

On a low heat, warm the wine with the honey mixing well. Pour this mixture over the fruit.

Refrigerator for at least an hour before serving.

PINEAPPLE ORANGE CREAM SALAD

1 20 oz. can crushed pineapple
1 large pkg orange Jello
2 cups buttermilk
ý cup chopped pecans
8-12 oz Cool Whip

Heat pineapple to boiling. Add Jello and dissolve.
Cool until syrupy. Add buttermilk and pecans.
Fold in Cool Whip and chill.

* I use orange-pineapple Jello, and use more pecans.
You will want to use a LARGE bowl to mix this in.

Mandarin Orange Fruit Salad

1 - 3 oz. pkg. apricot gelatin (or orange)
1 - 3 oz. pkg. lemon gelatin
1 c. boiling water
3 - 11 oz. cans mandarin oranges
1 can (22 oz.) crushed pineapple in heavy syrup
1 - 19 oz. pkg. mini marshmallows

Topping:

1 c. mayo
1 c. grated sharp cheddar
1 med. carton Cool Whip

Dissolve gelatin in water. Add oranges and pineapple including the juices. Pour in a 2 qt. dish. Spread marshmallows on top of the warm Jello. Cool and chill until firm. Mix mayo and Cool Whip and spread over congealed gelatin. Sprinkle with cheese and chill 2 hours or longer. Note: Apricot Jello isn't always easy to find but when I do, I use 2 apricot instead of the apricot/lemon.

I grew up on this:

Sliced pineapple or pear salad topped with a tad bit of mayo and a cherry, placed on individual salad plate with a lettuce leaf. Sometimes some shredded cheese as well.

This is a great summer recipe. Tasty!!

Frozen Banana Salad

4 mashed bananas
2 can (8-1/2 oz.) crushed pineapple with the juice
1 Tbsp. lemon jice
1 jar (6 oz. ) marachino cherries, drained and quartered
1/2 c. chopped pecans
1 tsp. salt
3/4 c. sugar
16 oz. sour cream

Combine all ingredients; stir well. Pour into a 9" square pan. (See below.) Freeze until firm. Cut into squares and serve on lettuce leaves.
Note: I fill a muffin tin with paper liners and spoon the salad into each liner. Put the muffin tin on a cookie sheet and stick in the freezer until the salad is frozen. Remove and put the "cupcakes" in a large plastic ziploc bag and keep in freezer. One "cupcake" makes just enough for dessert and they last a long time if you have a small family.

Glenda, my MIL made that pear and cheese salad all the time. Good.

I just cut up fruit and put it in a bowl. I put some OJ on it so it won't brown. I add the softer fruits such as strawberry at the last minute before serving. A wonderful fruit to add is Asian Pear, it is so nice and crisp.

I used to enjoiy cottage cheese with pineapple tidbits mixed in and eat with crackers.

Honeyed Grapes

1 bunch green grapes (seedless)
1/2 cup honey
2 Tbsp lime juice
2 Tbsp fresh mint, finely chopped (or 1 T. dried mint flakes, crushed)

Stem grapes and put them in medium sized bowl.

In small bowl, combine remaining ingredients; pour over grapes and refrigerate to marinate. Spoon grapes and marinade over cut up fresh fruit*.

*Whatever other fruit you want and however much of it: honeydew, cantaloupe, strawberries, blueberries, orange segments, apples, etc.**

**If adding bananas, wait until right before serving to add them.

Our very favorite fruit dip or dressing is made with Greek yogurt, thinned with a bit of fresh lemon (or orange) juice, lemon (or orange) zest's, and honey.

So refreshing ( without being too sweet) with a plate of fruit.

Had this served at potluck. Most ended up eating it by itself as a salad.

Fresh Grape Salsa

1-1/2 lb. Red Seedless Grapes, halved
1 Tbsp. red wine vinegar
1/2 Tbsp Agave syrup (I used honey)
1 bunch fresh mint, finely chopped
1/2 small red onion, finely chopped

Combine all ingredients and chill for one hour or overnight.
Can be served with toasted baguette slices and goat cheese or Brie.

Here's a different take on apple salad. I used Gala apples.

Waldorf Salad with Peanut Dressing

2 c. diced slightly tart apples, unpeeled
1/3 c. raisins
1/2 c. diced celery
1/2 c. chopped salted peanuts

Dressing:

1/4 c. creamy peanut butter
1/4 c. honey
1/4 c. mayonnaise
1-2 tsp. lemon juice (optional, add if using sweeter apples)

Toss together the salad ingredients and set aside. Blend the fressing ingredients together in a small bowl. Toss with apple mixture. Serve on a bed of lettuce.

My goodness, the one I grew up with ... haven't thought about it in years. So easy. Equal amounts of apples, oranges and bananas, cut in about equal size chunks, toss in a spoonful or two of sugar, mix and eat. Now I have GOT to have that salad! LOL

Angelaid, we have that a lot. The fruit depends on the season. It's usually bananas, mandarin oranges and something else--berries, peaches, pears, etc. Can't get any easier. I squirt a little agave nectar on it in place of the sugar.

Fruit Salad Trifle

In a trifle dish layer separate: mango, pineapple, oranges, kiwi, strawberries. The eye appeal is beautiful. Whip heavy cream with lime zest to spoon on top or fold lime zest into light cool whip mixed with lime yogurt and spread on top.

My favorite way to eat cantaloupe, and cantaloupe is in season here.

Remove skin from cantaloupe and seeds, cut into bite size cubes, **I have to salt my cantaloupe, and put in the center of the cubes a scoop of cottage cheese. Enjoy with good crackers.

Fabulous Fruit Salad

1 medium honeydew, peeled, seeded and cubed
1 medium cantaloupe, peeled, seeded and cubed
2 cups cubed seedless Watermelon
2 medium peaches, peeled and sliced
2 medium nectarines, sliced
1 cup seedless red grapes
1 cup halved fresh strawberries
1 11-ounce can mandarin oranges, drained
2 medium kiwifruit, peeled, halved and sliced
2 medium firm bananas, sliced
1 large Granny Smith apple, cubed
1 12-ounce can frozen lemonade concentrate, thawed
1 3.4 ounce package instant vanilla pudding mix

In a large bowl, combine the first nine ingredients. Cover and refrigerate for at least 1 hour.

Just before serving, stir in bananas and apple. Combine lemonade concentrate and dry pudding mix; pour over fruit and toss to coat. Yield: 20 servings (3/4 cup each).

This sounds really good, but I haven't tried it yet. Got it on Pinterest and it got raves.

Strawberry Cheesecake Salad

12 oz. Cool Whip
1 small pkg. cheesecake pudding mix (just the powder, not the milk)
3 (6 oz.) strawberry yogurt
1 lb. fresh strawberries, sliced
3 bananas, sliced (add just before serving)
Mini marshmallows (add just before serving)

Thaw Cool Whip. In a large bowl, stir together Cool Whip, yogurt and pudding mix. Let this set upin the refrigerator at least an hour before serving. Wash and slice strawberries. You can add strawberries to salad or wait and add with the bananas and marshmallows just before serving. Keep refrigerated. Serves about 10.

Fruit Salad with Cooked Dressing

1 tablespoon corn starch
1/2 cup sugar
1/4 cup pineapple juice
1/4 cup orange juice
1/4 lemon juice
1/4 cup water
1 tablespoon butter OR margarine
8 cups assorted cut-up fresh fruit

Combine corn starch and sugar in a small microwave-safe bowl. Gradually add juices until well blended. Add water and butter.

Microwave on HIGH (100%) power for 3 minutes, stirring after each minute. Continue to microwave another 60 to 90 seconds, stirring every 30 seconds until mixture thickens and boils.

Cool at least 30 minutes. Pour over fruit. Chill 30 minutes before serving. 12 servings

I just remembered that Mom used to make canteloupe and honey dew balls and freeze them in gingerale. I still remember how refreshing that was in the summer.

Not on a level with the recipes here, but a nice memory.

Surprised that no one has entered this very popular fruit concoction from the 60's. I haven't made this in years.

5 cup Ambrosia Salad
1 cup coconut
1 cup mandarin orange segments, drained
1 cup crushed pineapple, drained
1 cup sour cream
1 cup miniature marshmallows

Mix all together but the marshmallows and chill several hours or overnight. Stir in marshmallows just before serving.

Our favorite is Watergate Salad:

1 - 8 oz. container of Cool Whip
1 small package of Pistacchio instant pudding (dry)
1 large can of crushed pineapple
1/2 cup of chopped walnuts or pecans (optional)
Miniature marshmallows (optional)

Mix in bowl.

My husband named this "green slime" and that's what all the guys in the family call it. My oldest grandson would never even taste it because he wouldn't eat anything called "slime". Then one day, DH made him taste about 1/100th of a teaspoonful--and my grandson loved it. To this day, I have to make it every time he comes to visit. His fiancee made it for him but he told her it wasn't "as good as Grandma's"...so she won't make it anymore. LOL

Gazania, I can't believe we all forgot about that delicious stuff. I like it with marachino cherries halves, too. I have got to make that again soon!

We eat this as a side, but it could be a dessert, too. It's almost too easy to taste so good.

Blueberry Salad

1 large box (6 oz.) raspberry Jell-O (or 2 small)
1-1/4 c. boiling water
1 large (20 oz.) can undrained crushed pineapple
1 can (16 oz.) blueberry pie filling

Topping:

8 oz. cream cheese, softened
1 c. sugar
8 oz. sour cream

Dissolve Jell-O in water. Add pineapple and pie filling, Pour into a 8x8" dish and chill until it sets. Cream together topping ingredients and spread on top of the Jell-O. Refrigerate

Patti, thanks for reminding me. I always added some marachino cherries too.

Y'all have shared some delicious sounding recipes for fruit salad; can hardly wait to try. I love the idea of melon balls frozen in gingerale - absoloutely great idea. We used to make that Watergate salad a lot, too - it is so good - I will have to make again.

Very Easy Fruit Salad

1 pint strawberries - cleaned, hulled and sliced
1 pound seedless grapes
3 kiwis, peeled and sliced
3 bananas, sliced
1 21-ounce can peach pie filling

In a large bowl, combine the strawberries, grapes, kiwis, and bananas. Gently mix in peaches. Chill for 1 hour before serving.
