Looks super yummy! We had white chicken enchiladas. My extended family is coming Saturday for sandwich buffet, so we went with a majority vote and the kids chose unanimously. If they see Chinese food as an option, that will beat out the enchiladas for next year, I bet!

I love that you ladies did non-traditional Thanksgiving feasts! We went to (sorry it's complicated!) my mom's recently-passed fiance's family gathering, and it's a very non-traditional tradition! It's on an island on the coast of Maine. The sit-down dinner in the afternoon is lobster bake (lobster and steamers cooked outside on a fire pit right on the shore; steamed in seaweed) and then at night we have a buffet of turkey sandwich fixins (whole roast turkey, cranberry sauce, gravy, stuffing, bread, mayo, lettuce...) and I brought apple and pumpkin pies from my garden.

Now I think 'Lobster Bake' trumps enchiladas and Chinese food... Actually, I've never had lobster, except the little bit in bisque...Just really want to try it! Your follow-up supper sounds like quite the feast, too, Stacey!

I forgot to mention that we also all tried duck for the first time yesterday. A friend took DH along on a hunting day. DH didn't get anything, but his friend sent him home with the breast of one he shot. It was supposed to be marinated for 24 hours in Italian dressing, which ended up to be longer because of our power outage and weather. I didn't get any pictures, though, C, before everyone tasted it away.

I first got the idea of having what we'd consider non-traditional Thanksgiving foods when we watched the movie "What's Cooking?" It showed 4 families of different ethnic backgrounds preparing and enjoying their own versions of the Thanksgiving meal. Of all of them, it was the Hispanic family's dinner I wanted to join in on...They made such a wonderful and delicious sounding menu. The movie was supposed to be about relationships, of course, and how the families were connected, but it was the amazing food I remember!

I had an odd thing happen with my turkey - 19 # - miele web site suggested 2 and 1/2 hours on auto roast which was close to my past experience. I did put a spoonful or two of stuffing in the cavity just to give it flavor, and set the auto roast probe to 165. At 2 and 1/2 hours the probe hit temp, but the turkey didn't really look as brown as it has in the past, and the thigh didn't feel quite loose, so I left it another 30 minutes and checked with my own thermometer - 170 in the thigh and breast - 165 in the cavity. Removed the turkey and let rest for 30 min or so while I made gravy.(OK, major run on sentance, but that is how my mind is working today). Carving, the meat looked great - super moist, turned the turkey and found a very uncooked, almost raw, section of the thigh closest to the body. I am certain that this bird was completely thawed as it was brined the day before, and as I handled it prior to cooking there were no real cold spots. The only thing that I forgot to do was to let the turkey sit out for an hour or so before stuffing. I had it in the ice chest in the garage - so I guess it is possible that the thigh could have been up against the bag of ice . At any rate, we carved the entire turkey with the exception of the undercooked thigh and it was great. Fortunately I had made a batch of stuffing seperate from the bird so we used it and not any of the stuffing in the bird.

SOunds like you did have the thigh against the ice...would have really made the temp low in that one place. Sorry about that. Hope all else was wonderful. c

trailrunner, I am loving those egg rolls! We love making them here too, but I don't have one of those awesome looking fryers. We have
to fill a wok with oil and do it that way, but your way looks much more efficient and cooks more evenly. Hmmmm....I wonder if
there are free standing ones that are comparable to yours? Looks like you had a great feast!

Last year we had turducken and THAT was really tasty. (A chicken in a duck in a turkey with jambalaya shrimp stuffing.) How did
you like the duck, rhome? That is one of DS favorites!

Doonie, Thanks for the support! --It was amazing to try the duck. Never expected it to be so meaty, as opposed to more like chicken. The kids tried it before I did, and said it was like a cross between steak and chicken, and I think they were right...With a slight hint of something like liver...but not enough to ruin it. ;-)

Trailrunner, I love your Miele, too! We are a big fan of fried foods but I fry in a wok.

Anyway...do you per chance have a good won ton/dumpling wrapper recipe that doesn't use eggs. I've been experimenting with different flours and have yet to come up with the perfect combo.
