Help! Blank slate for kitchen layout

Just as I was coming to terms with making due with my current footprint, my DH says. "Forget it!" If we're going to do this, let's do it right - take over the dining room, move windows, whatever you want! So, now I have no idea where to start.

Here's the layout:

Major dimensions 302" x 138"

Windows can be moved (current large window sits only 25" from ground so doesn't allow for anything built in front of it)

Entryways can't be moved or closed, but opening to Dining Room could be made smaller.

Appliance needs:

30" induction cooktop (is 36" induction easily available?)

double wall ovens

Main sink at least 24"

Prep sink optional

36" side-by-side fridge

24" dishwasher

Some type of seating area - counter height, bar height, peninsula, island, built-in-corner nook...whatever

Cat feeding area

pantry

I do the cooking, DH does the cleaning, we have 2 little boys (4.5 and 3 months) who will soon enough be teenagers and eat us out of house and home. We don't do a lot of entertaining so I don't need to accommodate a lot of people in this space. We will have a separate "formal" dining room. I want this to be our "forever" home, so really want to do this right!
