Why are you replacing with triple sliding with double (not single)? I am you have thought through this but.... What if you replaced it with standard single door with large glass area (since you have decided to bite the bullet and replace door and spend the money).... I think this will be fine since you have access to the "deck" from the sliding door in the living room. So you still have double access to the deck. Sliding double door versus single door has the exact same access width. The only difference is the amount of light coming in. I think you have enough light that you can do this. I would not do any uppers between the frig and sink to open up the room a little. You could move the frig to that wall, so you have frig, sink, then range on the L going from left to right. This will give you more landing around the stove. I think you will still have enough room for a table in the eating area. Visually, if you are running the cabinets to the ceiling, you need trim that is as wide if not slightly wider than the stiles of the cabinets. Even if the crown is simple in detail, you still need a little more "weight" to balance the cabinets than what is drawn. If you want more modern clean line look (which would not look good with your 6 panel doors), then you can use slab or very plain doors with minimal trim.

I'm struggling with the same decisions. Is your cabinet color P&F's Buttercream? Have you picked the finish yet for knobs/pulls? I've had bin pulls on my white painted cab drawers at the lake and knobs on the upper cabinet doors. The bin pulls are easy to grab (I think they're Top Knob's "Somerset") and they've been great in keeping the white painted finish pristine even after years of use. I'm inclined to go with this type pull again for function, but I worry they might look a little country farmhouse in my suburban home. I sometimes have to clean around the knobs on the uppers. Especially if I've opened them while doing a lot of baking during the holidays there is a greasy sheen left behind from where my knuckles touch the doors. I get to it soon, so I've never had to scrub them. But it's something to consider if you have kids/teens who will be opening your white doors regularly. Are your cabs inset/overlay? My new ones will be inset -which I've never had before - and I wonder if one style suits them over another.

Thank you all for your replies and suggestions, especially the reassurance that mixed finishes is not at all unheard of. I went to the store and purchased some Rub n Buff to test. I have never heard of this stuff! I also bought antique brass and bright brass hardware at Home Depot to try spray on, too. Once I showed it to my husband, he said that if we were going to take the time to hand apply the rub n buff wax paint that it might be better and less time consuming to just spray all the hinges instead. Then he spoke to a friend at work who used Rustoleum metallic spray for all his hardware and that it turned out great. I had mentioned spray painting before to him, but his reaction was that it would not work long term due to the movement of the hinges. From what I have also read online, if you do several light coats, followed by a clear sealer topcoat, the finish lasts a lot longer, so we may go this route in the end. We have decided we aren't going to rush this. We are going to consult with a carpenter to get a quote for new cab doors and drawer fronts just to see what it would cost for a new style. I'm suspecting it is more than we can spend right now. If it is, then I will spray paint or rub n buff the hinges so that they "hide" into the espresso stain finish and then decide what color knobs to buy. Then I will re-finish all the bright brass on interior doors, so I will be left with only two finishes around the house... I hope! I’d spend your time de-cluttering before your guests arrive, rather than rushing to get knobs replaced for them. They won’t notice the knobs in all that stuff. Get your knobs after shopping carefully and choosing ones you like. You’ll have to live with them for a while, and, with the number you need, it won’t be cheap, so again, don’t rush the decision. Edited to add: OP removed the photos of the rest of her kitchen, which showed quite a lot of clutter on every surface, which was what had prompted my reply about de-cluttering.
