Why do so many folks put the fridge at a pinch point?

I was looking over the prospective design of someone here (see TheLink.)

The design has the fridge across from a peninsula with only 38' of clearance. My sister has a similar cramped situation. These designs would be OK if there were not the peninsulas there (or at least a good 48' of clearance.) At the very least they completely block up the egress while someone is accessing the fridge.

I am wondering why so many designs have this feature. I suppose that the fridge, being something that sticks out, is best placed at the end of a countertop section.

What do you think?

P.S. BTW, my fridge is against the far end wall of a double galley kitchen with peninsula in front.
