Induction quest's: why so many S/S pots seen?Straddling two elements?

Prob. getting a Bosch - w/or without the flexinduction elements. Why do I see about 90% of pots/pans demo'ed or for sale that are S/S in and out as opposed to non-stick on inside? Yes, I understand about requiring ferrous metal; it's just I don't see very much with the non-stick (it doesn't bother me as I feel it is safe) despite a few brands of non-stick being avail. that comply. Seems the majority here all use S/S exclusively. I'd think it's a lot harder to clean w/o that surface. Also, "generally speaking" - if I don't get the flexinduction of Bosch (or whomever), CAN I typically straddle two elements the 4 times a year I need to use a pancake griddle or a longer roasting pan to make gravy? The two companies I've called usually say "NO" - but it's quite possible it's to CYA. I've read a few cooks do it without issues. Lastly: generally speaking, again: does having the typical two S/S sides for the trim on a cook top REALLY help protect edges from being chipped or the top broken?
