Replace Granite? Important Question about cooktop

Backstory: Builder doesn't have what I want. I don't want to settle. I can put in the standard granite now and then change it later, right? But how much damage will happen to the cabinets etc, and what in the world do I do with that original granite? And the cooktop that is involved? I've tried to put in laminate and take a credit for the standard granite, but they already shot that down. So might as well put in the standard.

How is the built in cooktop taken care of? Would a seperate person need to be involved to remove the cooktop and then reinstall it? Plumber or who else? We are not handy at all.

In theory should this be done ASAP after closing, or can it wait a few years?

No backsplash is being installed, so don't have that to worry about.
