best/easiest way to refinish kitchen cabinets??

I have 50-year old pine kitchen cabinets that I love. It's the hardware I don't love so much: strap hinges that extend to the middle of the doors and not-too-attractive handles.

I've removed some of the hardware and the color doesn't look much different underneath but you can still see an outline, so to change out the hardware I will need to strip or clean somehow. I'm not that worried about the screw holes. I figure completely stripping them would give the best outcome, but there are a lot of cabinets so I'm looking for a shortcut.

Has anyone tackled a project like this with good results? Here are three views that show most of the cabinets.
