Shiplap board walls - do I need a backsplash?

I had not planned to do a backsplash but my granite installer is concerned about the boards behind my sink swelling if exposed to water. The sink base is bumped out, so the faucet sits 6" from the wall on the integrated ledge. There will be 4" of granite behind the apron sink. We are using leathered cambrian black.

This is a seasonal cottage so will only have a few months of use each year, but may have friends and family using the kitchen frequently.

Walls are uneven as the cottage is older so the counter can be scribed in but a granite backsplash will likely have gaps. Should I consider a BS behind the sink only to protect the wall? Rectangular, maybe the height of the faucet? Or would it look completely odd?
