what clear coat for partially painted interior brick wall

I have a brick wall that is 185 years old. About 150 years ago they added an addition so now the wall is in my kitchen. Parts of the brick wall has been painted over the last 150 years with probably milk paint, lead paint, oil paint and finally latex (and some of the brick never was painted). All different colors show thru depending if it was behind the radiator that was put in 100+ years ago or under the cabinets from 50 years ago to present wall color. We sanded and roughed up the surface in order to paint one color but everyoone says to leave it - just put a clear coat on it. What product can I use to do this? I went to a paint store and they were no help. I don't want the clear coat to yellow. I may want to paint over it in the future too. I'm usually in the kitchen forum and 1st time posting here. thanks
