shallow pantry

What would you do with the following space for a pantry:

60"W 98"H (floor to ceiling) 15" deep.

Right now I have a broken bi-fold closet door and flimsy shelves that are broken also. The bi-folds take up too much space from the opening, and there is too much dead space to the sides that I can barely reach into and where stuff gets lost in.

I'd like to open up the framing to have full access, but don't know whether I should get some prefab cabinets from IKEA where I can put wire drawers in, OR find some kind of doors that can open up completely. The IKEA cabs are 12" deep, so I'd loose a bit in depth.

Wondering if it's possible to do horizontally opening tambour doors at the full height. What would you do? My other cabinet doors are painted flat panels, so I could match that easily enough with IKEA cabs.
