Anyone know if you can freeze zuchinni?

Zucchini is awesome shredded and frozen and then make into my chocolate cake recipe! LOL. See the recipe of the day thread.

I really like zucchini. I never have enough zucchini. To freeze it cut it in 1/2 to 1 inch chucks blanch it, drain good, bag it and freeze it. Great for veggie soup and diced to smaller pieces in Minestrone. Slice it lengthwise and dip in milk then flour salt and pepper and fry gently in olive oil for wonderful side dish. Shredded into zucchini quick bread. Slice 1/4 to 1/2 inch thick and quarter the slice and add to cold macaroni/any pasta bits along with tomato pieces,cucumber pieces, chopped broccoli floweretts and chicken chunks, parsley celery salt and mayo. MMMMM Delicious summer macaroni salad. If zucchini showed up on my doorstep I would not complain.

Locally, the police chief has assigned two of his best (and most intimidating) officers as "Zucchini Police". Anyone found leaving zucchini on property not their own are required to retrieve it.
Enterprising gardeners have started leaving zuccini at the police station--the officers are on patrol!
They also tried to stash a bunch of the squash at the local Senior Citizen Center, but an alert oldster caught them and held them at bay until the zucchini police arrived.
The library book drop is full of zucchini, and the local recycling center has posted a notice that zuccini are not considered a recyclable material.
This is a joke, folks. At least so far . . . .

I would love some zucchini too. I used to shred it and freeze it in baggies in amounts premeasured for my zucchini bread or cake. I make a wonderful zucchini cake that tastes just like carrot cake and you use a cream cheese icing with it too. No one in my family likes icing, so I don't make the cake any more. I will have to look up the chocolate cake recipe. I would love a neighbor's excess squash, but alas no one grows it here.

Someone who works at the local bank here sneaks it into people's cars while they are in the bank. LOL

My neighbor one year was like that....EVERYONE on the block had tons of it! It was great...I just bought some over the week end and used a weight watcher recipe for oven fried zucchini...really good! I could eat zucchini everyday in some form!

Well I can't remember how many plants DH planted but so far since we are just now drying out ares our putting on....if we have a excess I will post here and mail to who ever would love some....I love to shred it and freeze it and make zuck bread.....Stacy

I'll take some of the excess zucchini! My favorite is stir-fried with olive oil, black pepper and fresh basil. Sometimes, I add onions or tomatoes.

Think I'll make it for church this Sunday ...

Send some here too! We wanted to get some planted but it just hasn't happened yet. Might still do it though :-) But in the meantime.... bring it on!!!

I'll take all I can get. DH makes them breaded and fried, they are fabulous that way. I'll have a few tomatoes within a month, last year I had so many I gave them out to all my neighbors and gave them out at my Dialysis Unit.

Mmmmmmmmmmm, Zucchini - love it! I didn't plant any this year, but I love to make banana bread and use zuc. instead - dense, moist and delicious!!!! It's also good in any recipe calling for egg plant, which I can't eat.

Pick 'em small! They taste better that way, and they don't get overwhelming. (Of course, there's always one that hides under the leaves and turns into a baseball bat.)

I like it broiled or shredded into meat loaf or nut bread! And yes, the small ones are the best!

My dad has that problem with okra. Last year they had to throw out all the leftover, frozen that they had from the previous year just to make enough room for the new stuff. In one day last summer, they picked about 25-30 POUNDS of okra. Now I love okra any way you can cook it but even THAT would be a little much for me! Apparently, it REALLY likes the hard GA red clay!

Late planting, late snows and too much rain. May have to "buy" some this year.

A fellow with a nice car parked in front of the local saloon and went inside. There was a large zucchini laying in the back seat. The barkeep noticed the car and told the patron that he shouldn't leave his car unattended in that location. This is a bad neighborhood. he should move the car into his lot and pay an attendant a small fee to watch his car. The patron disagreed, said, "Nah. It'll be ok."

Sure enough, after a couple of drinks, there was a sound of breaking glass. The patron rushed outside to see that the rear side window of his car was broken and now there were TWO zucchini in the back seat.
