walk in pantry help needed!

Hi! I have not been on this forum much lately. My plans for our new kitchen have been put on hold due to money! :( I still lurk and gather tons of ideas, though!

Anyway, we are finally getting around to doing the walk in pantry. I have found some sites that say the minimum clearance for a WIP is 40" This is not going to work in this space.

The pantry is 60 " wide and 43" deep.

My DH wants to put 16" deep shelves on the left side (will go to the door frame) and 12" deep on the right side (will also go to the door frame) and 8" deep shelves on the back wall.

This will only give 32" clearance on the sides, and 35" deep clearance.

Is this ok? Any opinions? Here is a pic of the space as it is now...
