Self-GC'ing, do you sign a contract with every sub?

I know, it's probably the best thing to do -- put everything on paper ahead of time. But the question is does everyone actually do it? I'm thinking about acting as our own GC for our kitchen & living room remodeling. We'll do some job ourselves, but some through subs, such as electrical, plumbing, plastering, countertop, etc. Some jobs are larger than others. And I'll try to find subs through referrals and trust that most people are honest. But when it comes down to commitment, should I have a contract signed with every sub? If so, where do you find a template for such thing? Or, is it just free form -- you put down whatever you want to be done?

For those of you who has done it, do you recall your first time being your own GC? What did you learn through the process? What would you do differently after having done it at least once? Any input is appreciated. TIA.
