Just made a big pot of cabbage soup from The Joy of Cooking, and it is really yummy as I have been sampling it as I finished it up, which is any cook's perogative. I added little sausage balls as I thought that would make it taste even better, and I added more of the veggies than the recipe called for, which is my usual stunt. Yum. Gonna be eating this for lunch for several days as it is just DH and me here. DS and his girlfriend may come down this weekend, so perhaps I can send some home with him.

In a large soup kettle, saute over low heat in 2 tablespoons of olive oil for 10 minutes till soft but not brown:
2 diced onions
2 medium leeks, white part only, chopped
2 tablespoons mashed or chopped garlic

Add and simmer for 15 minutes:
4 cups chicken broth
2 cups water
2 large carrots thinly sliced
6 ounces of sausage rolled into little balls (I used the small Farmer John package of skinless sausage and cut them into bite size pieces. The original recipe did not call for sausage.)

Then add and simmer 15 minutes:
2 peeled and diced medium potatoes
1/4 c chopped fresh parsley
4 cups shredded cabbage (I used a whole head)
salt and pepper to taste (really doesn't need salt with the broth being salted)
Add more water if you need to in order to cover the cabbage.

The recipe also called for 3/4 teaspoon of caraway seed which I did not use. Also suggested garnishing the bowls of soup with 1 tablespoon of Roquefort cheese or other blue cheese and using 1 teaspoon of caraway seeds instead of 3/4.

Minnie-Wasn't that the Dolly Parton weight loss soup? I always wondered why it was named that.LOL I use to make it all the time (without the meat) and it was good.I think it just had cabbage,onion,canned tomatoes,seasonings and a package of french onion soup mix but as time went on I added other non fattening veggies to it that I liked.

Shaun, your recipe sounds much more interesting than mine. My recipe is very old and I have not made it in years but I remember I liked the addition of caraway seed but I don't really get the sugar or Equal now?? Your recipe sounds better than the Cabbage Soup in my Joy of Cooking book. The one in mine calls for brown stock and sour cream. I think I would like your recipe better.

This is from a recent Joy of Cooking edition my DD gave me. My old one is from 45 years ago. I had given her a new one as a shower gift and then loved some of the recipes she used from it, so she reciprocated.

I love cabbage soup..........I use the WW's version and make massive amounts and freeze it. Just this week pulled some out of the freezer...Delish....ever hubby who doesn't "like" cabbage loves the soup...of course...he doesn't have a clue it's cabbage soup...he thinks it's tomato and it is...of course...tomato.

Warning, don't put in a whole head of cabbage as I did. The 2nd day, the cabbage flavor is much stronger. I do love cabbage, thank goodness.

I did put in a whole cabbage, but it was a small one. Ya know, for a quicker recipe you could buy a bag of the shredded cabbage that they sell for coleslaw, not the finely shredded, but the larger shred. Would save time and mess! Hmmm, maybe the shredded carrots to.
