Carrot Lentil Casserole

Someone wanted the recipe to this casserole I posted on the Wednesday Dinner thread.

1 onion (chopped)

1 cup carrot (finely chopped)

3/4 cup lentils (dried, rinsed) (I used a cup)

3/4 cup brown rice (uncooked)(I used a cup of a brown/red/

wild rice mix I had on hand)

3/4 cup shredded cheddar cheese

1/2 cup green pepper (chopped)

1/2 tsp. dried thyme

1/2 tsp. dried basil

1/2 tsp. dried oregano

1/4 tsp. salt (I didn't add salt to mine and it was fine)

1/4 tsp sage

1/4 tsp garlic powder

14.5oz. chicken broth (2 cups)

14.5 oz. diced tomatoes (undrained)

1. In a 3q.baking dish coated with nonstick cooking spray, combine the onion, carrots, lentils, rice, cheese, green pepper, and seasonings. Stir in broth and tomatoes.

2. Cover tightly with foil and bake at 350 for 1 1/4 to 1 3/4 hours or until the liquid is absorbed and lentils and rice are tender.

I took the foil off near the end and sprinkled more cheddar cheese on top and let it brown.
