Do all stone countertops have to be sealed?

Do all stone countertops have to be sealed? If so, do they have to be resealed?

This is a major concern for us, because there are some chemical sensitivities in our family. Sealing something, before it's brought into the kitchen and letting it dry well and air out is one thing. Sealing it once it's in the kitchen is possible, if we air it out well, before we move in. Sealing after we've moved in...not going to happen.

This is why Waterlox died a quick death on my list of possible finishes. When someone said they had to reseal it and that it smelled so bad...it was no longer a viable choice for us.

So...is there any stone that isn't sealed? I know other materials have problems, but you can find green friendly alternatives. I will probably be helping to finish most of our cabinets, so I can have a say on what's used. Also, tung oil and citrus...those sound a little less like a problem, but any concerns with these on butcher block?
