galley kitchen, 2 different countertops

I'm about to remodel a kitchen in a circa 1910 house. The area is small--about 11'x11' and chopped up with two long windows and three doors. I want to keep the original windows though they're very long, just 18" or so from the floor, and the doors are vital--one from hall, one into butler's pantry, one to outside. This means we're probably going to have a galley kitchen, with countertops along both side walls, one for range top, other for sink. The sink wall in particular, because of the windows, will measure only 60". Because there will be very little space on either side of the sink, I hate to use something expensive like quartz or granite and am thinking of ceramic tile for those counters, something else for the longer, range-side counters, which will be the major prep area. Any suggestions?
