Went for their Monday chicken and dressing casserole, but ended up with country fried steak, blackeye peas, greens beans.

Wish I had gotten the chicken and dressing casserole.

Cornish Hens tonight. My first time making them, just sounded good. I'll make stove top and veggies with them.

I've made wild rice salads, with cranberries, nuts, celery and onions. It's delicious. I'd like to make a hot wild rice dish, let us know how yours turned out Patti!

I cleaned out the frig of some leftovers. DH was hungry but didn't like anything that was in there, so he's eating crackers with salami, cheese, tomatoes and a homemade pickle relish for dinner. (his choice)

Lots of chicken today. But I have to say Ruthie's dinner sounds really good and so does the country fried steak. Sorry it wasn't very good, Glenda. It sure sounds yummy!

I'll let you know about the rice, Jas. It has dried cranberries cooked with the rice and after it's cooked add green onions and toasted almonds. Can't be too bad, eh?

I have a cube steak, some creamed peas and some rice. My mom used to make crm. peas all the time when I was a kid, and I never could figure out how to do it. Well, I followed a simple butter and flour recipe and now I know. In fact, I'll be making another one of Mom's staples when I was little - creamed potatoes. I asked my aunt if she ever made creamed macaroni and she said "never". We used to eat that too - anybody else?

I love creamed peas, Schoolhouse. My mother made them, too. I like them with either salmon or tuna flaked in it and served over toast or puff pastry shells. I faintly remember creamed potatoes, but I hated potatoes when I was young. They still don't sound all that good unless there was some cheese in it. Never had creamed macaroni, though.

Mahi-Mahi (purchased flash frozen from Trader Joes)with lemon pepper/butter sauce, sticky rice, a yummy mix of baby greens with tomato, avocado,cucumber and hard boiled egg/ with choice of dressing, and some crusty bread. Peach pie for dessert. Can you tell that I went grocery shopping today? LOL

Mike grilled pork chops and I made loaded mashed potatoes and beets. Also served applesauce, you just can't eat pork without it according to my parents when I was growing up.
