LOOKING for: Saltine Crackers Candy Brittle

I have lost my recipe using saltine crackers as a base for a brittle type snack. It uses the crackers on a cookie sheet and covered with brown sugar and butter, I think. When the cooking time is up you put chocolate chips on top and when softened, spread over crackers. After cooled you break it up into pieces.

Does anyone have this recipe. It's great!

I found these two recipes on the Nabisco web site under Saltine Crackers. Perhaps one of these is what you're looking for; they both sound yummy.

Crunch Bars

Prep Time: 10 min
Total Time: 32 min
Makes: 16 servings

Ingredients:
35 PREMIUM Saltine Crackers
1/2 cup (1 stick) butter or margarine
1/2 cup firmly packed light brown sugar
1 pkg. (8 squares) BAKER'S Semi-Sweet Baking Chocolate, chopped
1 cup chopped PLANTERS Walnuts

Preparation:
PREHEAT oven to 400Â°F. Place crackers in foil-lined 15x10x1-inch baking pan.

PLACE butter and sugar in saucepan; cook on medium-high heat until butter is completely melted and mixture is well blended, stirring occasionally. Bring to boil; boil 3 min. without stirring. Spread over crackers.
BAKE 5 to 7 min. or until topping is golden brown. Immediately sprinkle with chopped chocolate; let stand 5 min. or until chocolate is softened. Spread chocolate evenly over ingredients in pan; sprinkle with walnuts. Cool. Break into pieces.

Total Time: 32 min
Makes: 12 servings

Ingredients:
35 PREMIUM Saltine Crackers
1/3 cup butter or margarine
1/2 cup firmly packed light brown sugar
6 squares BAKER'S Semi-Sweet Baking Chocolate, chopped
1/2 cup chopped PLANTERS Walnuts

Preparation:
PREHEAT oven to 400Â°F. Line 15x10x1-inch baking pan with foil; grease foil. Spread crackers evenly into prepared pan.

PLACE butter and sugar in saucepan. Bring to boil on medium-high heat, stirring frequently. Reduce to low; boil 3 min. (Do not stir.) Immediately spread over crackers.

BAKE 7 min. Immediately sprinkle with chocolate; let stand 5 min. Spread melted chocolate over tops of crackers. Sprinkle with walnuts. Cool. Break into pieces.

Some of my personal favorites: SNICKERS FUDGE Bottom Layer: 1 cup milk chocolate chips (6 oz.) 1/4 cup butterscotch chips 1/4 cup creamy peanut butter Filling: 1/4 cup butter 1 cup sugar 1/4 cup evaporated milk 1-1/2 cups marshmallow cream 1/4 cup peanut butter 1 tsp. vanilla 1-1/2 cups chopped salted peanuts Caramel Layer: 14 oz. pkg. caramels 1/4 cup whipping cream Icing: 1 cup milk chocolate chips (6 oz.) 1/4 cup butterscotch chips 1/4 cup creamy peanut butter Combine the first 3 ingredients in a small saucepan; stir over low heat until melted and smooth. Spread onto the bottom of a lightly greased 13X9X2 in. pan. Refrigerate until set. For filling, melt butter in a heavy saucepan over medium-high heat. Add sugar and milk. Bring to a boil; boil and stir for 5 min. Remove from heat; stir in the marshmallow crÃ¨me, peanut butter and vanilla. Add peanuts. Spread over first layer. Refrigerate until set. Icing: In another saucepan, combine chips and peanut butter; stir over low heat until melted and smooth. Pour over the caramel layer. Refrigerate for at least 1 hour. Cut into 1 in. squares. Hi Khandi! Here are the results! I was trying to create a piece of candy juxtaposing salt and chocolate. I just had a craving for it. I felt the chocolate had to be something more than *just* chocolate, so, I made an espresso brittle (after reading all the posts about brittle!). I wanted to cover it in chocolate, but didn't feel like taking the time to dip, set, and possibly dip again. so I found some candy molds, filled them 1/2-way with semi-sweet chocolate (Ghirardelli), place a piece of brittle in the mold, then filled with chocolate. After the chocolate set and I popped the candies out, I swirled chocolate over top and dropped a few flakes of sea salt. Here's the result: I think it tastes good. I couldn't quite find the size molds I was looking for...I wanted more of a wafer, and smaller pieces. I think there was a touch too much chocolate this time. I think next time I will take the time to dip, set, maybe dip again. That way I can control the size and amount of chocolate. I might also try milk chocolate. I did love the taste of the semi-sweet chocolate and salt. I could've taken more salt...but I know no one else would have liked that! Just in case someone wants it, here's what I did: Deb's Chocolate-Covered Espresso Brittle Brittle: 1 cup sugar 1/4 cup water 2 Tablespoons espresso beans, crushed 2 Tablespoons butter One dash salt Preparation: Line cookie sheet with parchment or wax paper. Spray paper with cooking spray. Combine sugar and water. Heat over high heat until color is light amber. Add crushed espresso beans. Continue until color is brown. Remove pan from heat. Stir in butter and salt. Immediately pour brittle onto prepared cookie sheet. Use metal spoon/spatula to spread layer thin. Let cool. Chocolate: 4-6 oz chocolate (milk or semi-sweet) Melt chocolate in double boiler. Break brittle into small, bite-sized pieces. Dip into chocolate. Place onto wax paper and let set. Dip again for thicker coating of chocolate. Drizzle chocolate on top of candy, one at a time, and drop a few flakes of sea salt on top. Alternate: Fill thin candy mold halfway. Press small piece of brittle into mold. Fill mold the rest of the way. Put in refrigerator for a few minutes (until chocolate no longer looks "wet' when looking through mold). Pop candies out onto wax paper. Drizzle tops with chocolate, one at a time, adding a few flakes of sea salt.

Here are a couple of cold ones. The shrimp is of course just the starter dish: This was served as part of a buffet dinner in Canada last summer. Everyone loved it. Prep time: 20 minutes Cooking time: 15 minutes Makes: 8 servings Ingredients for Salmon: 2 1/2 lbs salmon fillets, cut into 16, 1 inch wide fingers 3 TBSP extra virgin olive oil juice and zest of one lemon 1 garlic clove, finely chopped 1 TBSP chopped fresh dill salt and white pepper to taste lemon slices for garnish 2 to 3 cups baby salad greens Ingredients for Tzatziki Sauce: 1/2 cup yoghurt 1/4 cup sour cream 2 garlic cloves, chopped 1/2 English cucumber, coarsely grated and squeezed of its moisture 1 TBSP fresh dill chopped salt, fresh cracked black pepper and lemon juice to taste Preparation: Salmon can be cooked the night before and served cold the next day. 1. Preheat oven to 400F. Place salmon on a parchment-lined baking sheet. Combine olive oil, lemon juice and zest, garlic and dill in a bowl and brush it over the salmon. 2. Cover salmon with foil and bake for 15 minutes, or until just cooked through. Uncover and cool to room temperature. 3. Cover with plastic wrap, leaving the fish in the pan and put it in the fridge. 4. Combine the tzatziki ingredients in a bowl and store in the fridge until needed. 5. Make a bed of the salad greens on a serving platter, arrange the salmon on top, garnish with lemon slices and serve the tzatziki alongside. Peel the grapefruit and separate each piece, also peel the white skin, being careful to get the complete pieces. Prepare the dressing by mixing all the ingredients. To serve: put the lettuce leaves on the dish, adorn with the grapefruit and shrimp. Put the dressing on top and serve. This salad will be better if the dressing can be prepared two hours before. These cookie bars are so easy to make and very delicious. You can't eat just one! 2 sticks butter 1 c. granulated sugar 1 c light brown sugar, firmly packed 2 large eggs, well beaten 2 c. self-rising flour 1 c. toasted pecans (I used walnuts) 2 tsp. pure vanilla Directions: Preheat oven to 300 degrees. Melt butter and add sugars. Blend well by hand (no mixer). Add beaten eggs, stir well. Add self-rising flour and stir until the lumps are gone, just until blended. Add pecans and vanilla. Turn out into a greased and floured 9x13-inch baking dish. Spread with your fingers or a spatula dipped in water. Bake approximately 40 to 50 minutes (ovens vary) being careful not to over bake. When cool, cut into squares. Note: You can dust these with powdered sugar while still warm. I have also added a pinch of cinnamon to the sugar. You can use pecans or walnuts, both or good. I have also thrown in a 1/2 cup simi-sweet chocolate chunks, however the cookies are delicious without the chocolate. I made these in the medium pan I melted the butter in. No need to dirty a bowl. Quick & easy! You will like them!

this is very similar, very simple and really good! from a co-worker:

Christmas Bark Ã¯Â¿Â½" Linda H

Melt 2 sticks (1/2 #) unsalted butter and stir in
2 C sugar

Line a cookie sheet with aluminum foil and line it with one layer of UNSALTED saltine crackers. Pour the butter/sugar mix over the crackers. Broil for 1 to 2 minutes.

Pour 16 oz of semi-sweet chocolate chips over the mixture, spreading it out with a spoon. Top with slivered almonds and let cool before breaking into large chunks.

Place saltine crackers, salty side up, in prepared pan. In a saucepan, boil butter and sugar for 2 to 3 minutes, stirring constantly. Remove from heat and stir in almond extract. Pour mixture over crackers and bake for 4 to 6 minutes. Remove from oven, top with candy bars, and spread evenly as chocolate begins to melt. Cool slightly and transfer onto waxed paper. Allow to cool completely.

I just made this and although it's very tasty, the chocolate is very gooey and it doens't "break apart" like a brittle would.

Did I do something wrong?

My mom made this saltine cracker brittle last year to give at Christmas and it was very good!

Here's mine...
1 pkg soda crackers
1 cup margarine
1 cup brown sugar
1 tsp vanilla
1 pkg milk chocolate chips
1-2 boxes crushed smarties

Preheat oven to 350. Line cookie tray with foil and spray. Lay soda crackers side by side over sheet with salted side up.
Bring brown sugar and margarine to a boil; continue boiling for approx three mins (from start of boil not putting on heat). Remove from heat, then add vanilla. Pour mixture over crackersin tray. Bake for 5 mins or until bubbly.
Remove from oven, pour choc chips over top and spread evenly, top with crushed smarties (adds a nice presentation to it). Cut into desired sizes and cool. Freezes well. I love this one.

1 sleeve (4oz) saltine crackers
1 cup butter
1 cup packed light brown sugar
12 oz semisweet or milk chocolate pieces
opt: 1 cup chopped nuts

Line a 15 by 10 by 1-inch jelly roll pan with tin foil. Lightly spray foil with a non-stick cooking spray.

Place saltine crackers, salty side up, in prepared pan. In a saucepan, boil butter and sugar for 2 to 3 minutes, stirring constantly. Pour mixture over crackers and bake at 400 for 4 to 6 minutes. Remove from oven, top with chocolate, and spread evenly as chocolate begins to melt. Sprinkle with nuts, lightly press into chocolate. Cool until firm, then cut or break into pieces. (I use a pizza cutter) Can be frozen.
