I'm not sure but I would call a couple of local bakeries and ask what they would do.

I'm not familiar with the seashells you are referring to. But if you are having some rather humid and hot weather, I would consider freezing these items that could melt. This way they will stand up to the heat a little longer. My wedding last year was only in the low 70s and stuff started to melt when it was on a covered porch. I would take as many precautions as I could to ensure everything survives the heat.

Temperature changes are terrible for chocolate--as you no doubt know, that causes bloom. You do have a serious problem--you may have to decide which is the lesser of 2 evils. Melted chocolate shells, or unsightly bloomed chocolate. Given your situation, I guess I'd opt for the fridge and take my chances with bloom. You probably want them on the top fridge shelf, since that's the warmest area, and will cause the least shock to the chocolate. First, though, I'd try calling several local bakeries/chocolatiers to get their best recommendation before making my decision

Is the place you got them from close enough to go back and ask them? Otherwise call a few places. You could even check on the cooking forum. There's several people there who work with chocolate a lot.

Knowing nothing about it, my impulse is to freeze them in an airtight bag or container.

My thought would be to NOT refrigerate or freeze. If they are in an airtight box, I would just try to keep them in a cool spot in your house.

Good advice to go ask at the cooking forum though - that is where the experts are!

I FINALLY got thru to one of the other Publix bakeries and the head baker said not to freeze or refridgerate..just keep them airtight in a cool room..so they are resting comfortably in my chilly bedroom! He did say if I froze or cooled them-it wouldn't necessarily be blooming that would harm them-it would be like a condensation appearing on them. Thanks again!

Glad you got an answer to your seashell question! If you can, Sharon, please post pictures of the cakes when they are done, I'd love to see them and I'm sure others would as well.

Suzan..I'd be more than happy to post pics of the cakes..once I learn how! LOL...I had webtv for 13 yrs and just got a laptop in Jan. So far-haven't figured out how to do that..I save pics from my camera card, into a folder but that's where they all are-cause they don't know how to go anywhere else! tee hee
The bride is a dear friend of mine-like my other daughter. Not only doing the cakes but I made all of the bouquets, boutineers, the attendants' headpieces, the reception decorations, the floral & tulle bows for the trellis for the ceremony on the beach and gifted her with a satin shoulder bag encrusted with crystals and also a mini veil headpiece to wear during the reception...I made both of them. Been working on this wedding since Feb.!
