Concrete Patio/ Stain?/ Stamped?/ Slate?

Thanks to everyone for posting their photos on the conrete vs. pavers thread. Now, though, I'm more confused than ever. I was told that flagstone or slate would have to be applied to our concrete patio without covering the expansion joints. We have many of them, and i just couldn't see trying to line up a free-form rock with all those joints. That's why we were considering the stain.

However, I have been looking at lots of slate patio photos, and not a single one has an exposed expansion joint---and you'd see it, as all the rock would line up on both sides of it.

So, it is absolutely necessary to keep those joints exposed, and if so, why doesn't anyone do it? The beautiful patio photo posted by the person who is worried her cushions are the wrong color must be concrete under all that stone---and no expansion joint is visible.
