Spring Strawberry Spinach Salad

"This fresh strawberry and spinach salad is tossed with a sweet poppy seed dressing."

Original Recipe Yield 4 servings

Ingredients

â¢ 1 bunch spinach, rinsed

â¢ 10 large strawberries, sliced

â¢ 1/2 cup white sugar

â¢ 1 teaspoon salt

â¢ 1/3 cup white wine vinegar

â¢ 1 cup vegetable oil

â¢ 1 tablespoon poppy seeds

Directions

1. In a large bowl, mix the spinach and strawberries.

2. In a blender, place the sugar, salt, vinegar, and oil, and blend until smooth. Stir in the poppy seeds. Pour over the spinach and strawberries, and toss to coat.

Honey-Soy Glazed Salmon

1 tablespoon honey
3 teaspoons low-sodium soy sauce
1 skinless salmon fillet (1 1/4-pound piece), cut into 4 pieces
kosher salt and black pepper
1 tablespoon canola oil
1 red bell pepper, thinly sliced
1 tablespoon chopped fresh ginger
3 bunches spinach, thick stems removed (about 12 cups)
1 tablespoon toasted sesame seeds

Heat broiler. In a small bowl, combine the honey and 1 teaspoon of the soy sauce.
Place the salmon on a foil-lined broiler-proof baking sheet and season with Â½ teaspoon salt and Â¼ teaspoon pepper. Broil for 5 minutes. Spoon the honey mixture over the salmon and broil until the salmon is opaque throughout, 2 to 5 minutes more.

Meanwhile, heat the oil in a large skillet over medium-high heat. Add the bell pepper and cook, tossing occasionally, until just tender, 3 to 4 minutes; stir in the ginger.
Add the spinach and Â½ teaspoon salt and cook, tossing, until just wilted, 2 to 3 minutes.

Add the remaining 2 teaspoons of soy sauce. Serve with the salmon and sprinkle with the sesame seeds.

Baked Fresh Cherry Pie

Prep Time: 25 Minutes
Cook Time: 50 Minutes
Ready In: 1 Hour 15 Minutes
Servings: 8
" If you 've never eaten a fresh cherry pie, you 're in for a treat with this recipe. It 's a bit of work to pit the cherries, but once this is done, there 's not much left to do: mix the cherries with almond and vanilla extracts, sugar and tapioca"
Ingredients:
1 recipe pastry for a 9 inch double crust
pie
4 tablespoons quick-cooking tapioca
1/8 teaspoon salt
1 1/4 cup white sugar
4 cups pitted cherries
1/4 teaspoon almond extract
1/2 teaspoon vanilla extract
1 1/2 tablespoons butter
Directions:
1. Preheat oven to 400 degrees F (205 degrees C). Place bottom crust in piepan. Set top crust aside, covered.
2. In a large mixing bowl combine tapioca, salt, sugar, cherries and extracts. Let stand 15 minutes. Turn out into bottom crust and dot with butter. Cover with top crust, flute edges and cut vents in top. Place pie on a foil lined cookie sheet --- in case of drips!
3. Bake for 50 minutes in the preheated oven, until golden brown.

RED BEANS AND RICE -------------------------------------------------------------------------------- INGREDIENTS: 1 Cup red kidney beans, dried 5 Cups water 1 smoked ham hocks 2 Tablespoons salt 1/2 Teaspoon red pepper flakes, crushed 1/2 Teaspoon dried thyme 2 Cups rice (Uncle Bens) 1) Soak the beans overnight in 5 cups of water in a cool place or in the refrigerator. 2) Drain the beans and place them in a 5-quart pot. Add 4 cups of water, the ham hock, salt, red pepper, and thyme. Heat to boiling , then reduce the heat to a bare simmer. Cover and cook until the beans are almost tender, about 1 hour. 3) Stir 1 cup of water and the rice into the beans . Heat to boiling, reduce the heat to a simmer, and cook, covered, until the rice and beans are tender and the liquid is absorbed, about 25 minutes. Check the seasonings. If you like, you may remove the meat from the ham hock and mix it into the rice. Serve hot.

Pan-Sauteed Chicken with Vegetables and Herbs 1/8 tsp ground black pepper 1/8 tsp paprika 2 tbsp all-purpose flour 4 (about 1Â½ lb) bone-in skinless chicken breast halves 1 tbsp canola oil 2 small red onions, cut into quarters 1 lb new potatoes, cut into quarters 16 fresh whole baby carrots, green tops trimmed to 1" 1Â½ cups low-sodium chicken broth 3 tbsp lemon juice 1 tbsp chopped, fresh oregano leaves 1 tbsp chopped, fresh thyme leaves Combine black pepper, paprika and flour on a plate. Coat chicken with flour mixture. Heat oil in a 12" oven-safe skillet at medium-high heat. Add chicken and cook until well browned Â about 5 minutes per side. Reduce heat to medium. Remove chicken from skillet. Add onions and potatoes to skillet and cook for 5 minutes. Add carrots, broth, lemon juice and oregano. Heat to a boil. Return chicken to skillet and cover. Bake at 350Â°F for 20 minutes. Uncover skillet and bake until chicken is cooked through and vegetables are tender Â about 15 minutes. Sprinkle with thyme.

Shortcut Scalloped Potatoes (Chatelaine) Partially cooking spuds before baking means they required just 30 minutes in the oven. 1 tbsp butter 3 lb potatoes, about 6 medium 1 1/2 cups whipping cream 10 oz chicken broth 1 garlic clove, minced 1 bay leaf 1/2 tsp nutmeg 1/2 tsp alt 1 small onion, red or white, sliced into rings 1 1/2 cups grated gruyere, about 3 oz. Preheat oven to 375. Rub butter over bottom and sides of a 9x13" baking dish. Peel potatoes and slice thinly. Pour broth and whipping cream into a large pot. Stir in garlic and seasonings except thyme. Add potatoes, separating as you add. Bring to a boil, covered, over medium-high. Uncover, and simmer gently, stirring occastionally, until potatoes are almost fork-tender; 10-13 minutes. Discard bay leaf. Turn potato mixture into baking dish. Scatter with onion and thyme then cheese. Cover tightly with foil. Bake in preheated oven for 15 minutes. Uncover. Bake until bubbly and cheese is golden, 15 minutes. Let stand 15 minutes before serving.

This chicken is so flavorful. This recipe is definitely one of the 'keepers' I've found. Vinegar Chicken 5 chicken leg quarters Â¼ cup white or cider vinegar (I used cider vinegar) Â¼ cup soy sauce 2 tablespoons Worcestershire sauce 1/8 teaspoon salt 1/8 teaspoon black pepper 1/8 teaspoon garlic powder 1/8 teaspoon onion powder Preheat oven to 425 degrees. Lightly grease a 13x9-inch baking pan. (!!WARNING!!The basting liquid will make a sticky mess on your pan. Use a disposable pan or line your pan with foil. Even with foil I got a sticky mess underneath but I used a ceramic-type baking dish that cleaned up with a little soaking.) Place the chicken in the pan. In a small bowl combine the vinegar, soy sauce, and Worcestershire sauce. Sprinkle one-third of this mixture over the chicken. Season with salt and pepper, garlic powder and onion powder. Bake for 30 minutes. Remove the chicken from the oven, and baste with another one-third of the vinegar mixture. Bake 15 minutes longer. Baste again with the remaining vinegar mixture. Return to the oven and continue baking for 15 minutes, or until the skin is golden brown and crispy.
