Coconut Oil

I know that several of us as well as spouses are having health issues to deal with and I wanted to share an interesting and informative thread from the FL Gardening forum here at GW.

I know most of the folks and on Veronika's recommdation I am switching to coconut oil. The post from Tony (who's DW is a pharmacist) was very enlightening.

I have several friends who are Type 2 diabetic that I have forwarded this thread to.

My DD has been reading up on this and has started using Coconut oil in her cooking.

Mydaughter was using that till I eard something bad about it.i dont remember exactly what anymore.You can take cinnimon tablets to ward off diabetes.

As a long time user of coconut oil, you use the same techniques making pastry with coconut oil that you would any other fat, and you can often use up to 25% less and get the same results for a lower fat pastry. Coconut oil can be used either as liquid for an oil crust recipe, or you can refrigerate or freeze coconut oil to make it solid and use it as you would a solid fat. If you use a food processor, be sure to freeze the coconut oil in 1 teaspoon portions, and blend it in short pulses. If you are using it as a liquid fat, follow an oil crust recipe for best results. When using it as a solid fat, add half of the fat to the flour mixture and blend until it is well distributed. This portion of the fat will coat the flour. Where fat coats the flour, the liquid can't penetrate and less gluten will form - hence the term short-crust pastry. The fat shortens the strands of gluten. This also is the tenderizer. Since a good pastry is a combination of tenderness and flakiness, the second half of the fat should be hard and solid when added. Grate hard refrigerated or frozen coconut oil on the big holes of a box grater and add it last to the pastry mixture. Work quickly if you have a kitchen temperature 75-degrees F or warmer. Mix the second addition lightly, leaving some larger chunks of the fat. This fat will create the layers of flakiness. Where there are large chunks of fat, the fat will melt and turn into steam in the oven. The steam lifts the layers of pastry to create flakiness. Now add the liquid. This same technique works with any hard fat. Any hard fat can be melted and used in an oil crust pastry. However, oil crust pastry tend to be tender and mealy, rather than flaky. Be sure to refrigerate the pastry before rolling it out so the fat hardens and the gluten relaxes. This time of the year my coconut oil is very soft/mushy due to the warm ambient temperature (coconut oil becomes liquid at 77-degrees F), while in the winter it's completely hard in my 62-degree kitchen. If you have LouAna brand coconut oil available (I can get it at Wal-Mart and my Kroger-associated Dillons store), it has NO coconut flavor, so it works well for applications you don't want that slight coconut flavor. When taking care of wood, oils tend to soak into it. I saw the twins on Antique's Roadshow talk about someone that used linseed oil on old furniture and the piece actually smelled like it. I think I would stick to what works best and do so sparingly, if at all. I think the best way is to wipe it down with a cloth with dusting spray and for antiques to keep your home humidified, especially in the winter or if you live in a southern climate where it is relatively dry all year.

It will only work this way eloise_ca if your hair needs even more help olive oil is supreme do do the same procedure of leaving oil on hair as long as possible ( overnight if possible.) Wrap oiled hair in Saran Wrap and then aluminum foil to make your head sweat. Keep it on at least 3 hours. I have even braided my hair and played tennis. Get in the shower and stay far away from the running water. Then pour your shampoo on your hair and it will cut the oil. I do something else for 3 minutes. While shampoo works thru your hair. Wash hair. You may wash it twice. Don't worry. You haven't defeated the purpose of this. Worst case is do it 2 days in a row. For others whose hair is not dead dried out, mayonnaise every few weeks wil keep it healthy. Good luck eloise_ca. Post your results.

Nicole --- We use two different brands of organic coconut oil -- Tropical Traditions Gold Label and Nutiva Organic Virgin Coconut Oil. I always order the Tropical Traditions directly from their website, and order the Nutiva from Amazon.com. I always put a tablespoon of it in my coffee, and I use coconut oil as a moisturizer. I also drink coconut milk, not dairy milk, and eat coconut milk ice cream and coconut milk yogurt. The "regular" coconut milk yogurt is "runnier" than dairy yogurt (and really creamy) but the coconut milk greek yogurt is thick and creamy like dairy greek yogurt.

I have read alot about Coconut Oil while on Low Carb sites. Apparently it helps while trying to lose weight by boosting the metabalism and aiding digestion.
I am going to try it I think. And alot have said it does wonderful things for your skin.
I am going to look for it tomorrow when I'm out.

I did a lot of research on this last year when I read good things about it on a fibromyalgia message board. Apparently there's a good way of processing coconut oil and a not-so-good way. It's a saturated fat, but because of the medium-chain whatevertheycallit, it's not considered unhealthy. In fact, quite the opposite.

I loved the taste! But I had to stop using it because it gave me chest pains. Butter and other saturated fats will do the same thing. So I question those claims.

We're all different, though, so it might work out just fine for the rest of you. Just to be sure, though, I'd have a cholesterol test after a couple of months.

I dunno a thing about it. Except on Dh wonderful new diet (because of high cholesterol)it says avoid coconut oil!
I hope someone has good luck with it but we don't dare try it.

Does one pour the oil on one's coconut? On sore joints?

How much? How often?

And rub it in?

How does one know when there's improvement?

The "good" or "bad" for you difference is in the way it is processed.Some cheaper grades are hydrogenated because of the way it is processed.It is my understanding that the cold pressed,or virgin is the one to use for the benefits.
I got interested in it about 4 years ago and bought some online,can't remember the company.I never really "got into it" and it is still sitting in my pantry.I opened it the other day and it is still good! I hadn't thought of it again until I read this post.DH and I both have high blood sugar and I think I will start using it and see if it helps.We don't take medication,just control it with diet.
Anyone else just take it by a spoon full and swallow it? I tried that a few times before and it kind of strangled me.Anyone else have that kind of experience? The one I have looks kinda like Crisco but not as firm and it melts at body temperature.
At the time I bought it my mom was living with me and she had really,really dry skin,especially on her arms and legs.Nothing seemed to help so I mixed an equal amount of coconut oil and her regular cocoa butter body lotion together.Within 2 weeks time her skin was so much better and eventually got 90% better than it had been.She used it faithfully several times a day.I used it on my face out of the jar and it makes your skin really smooth and moist.

DH cannot eat anything with Coconut Oil--really upsets his stomach and he says the after taste is like soap bubbles. We stick with Canola oil. Also if you are diabetic/heart problems, PLEASE check with your Dr../

Several of the country's leading cardiologists have told DH not to eat ANYTHING containing palm oil no matter how it's processed. (He's battled high cholesterol for years...runs in his family.)
