Sue's Big Batch Banana Pineapple Muffins

6 cups all purpose flour

4 cups white sugar

2 teaspoons baking soda

1 teaspoon salt

6 eggs

1 1/2 cups vegetable oil

2 teaspoons of vanilla or butter nut vanilla

1 20 oz. can of crushed pineapple, juice included

4 cups of mashed bananas, can use the ones you have tossed in the freezer.

Mix together the first 7 ingredients, mix well. Then add the pineapple and the mashed bananas. Only stir until mixed. Do not over mix. Put in cupcake liners 2/3 full. If you wish you may put a crumb topping on the top. Bake the pans at 350 degrees probably at least 20 minutes. It depends on you ovens, just check to see if they are done before that time. This will make 5 dozen muffins.

You can also put chopped nuts either in the batter on in with the crumb topping. Hope you enjoy this recipe.
