Batter bread & muffin problem...And fav recipes!!

Sometimes when I make a batter bread (banana, corn, etc) or muffins, I get a too-high rise in the middle.

The sides will come to a certain height, then there is a slight dip before the bread then slopes up to height. On muffins, the height is sometimes almost a point.Imagine a slightly flattened out sombrero. :D

They taste fine, and the crumb is o.k., but I don't always get the nice, evenly sloped tops.

It isn't a problem except when I want the finished product for company, a gift or a church bake sale. In these cases, things should LOOK good as well as taste good!

I googled looking for muffin troubleshooting, etc. But, while there are all sorts of comments on muffins that sink in the middle, I could find none about this problem.

I am also interested in favorite recipes for muffins and batter breads, from the basics to the unusual. I will type up a heavenly Lemon bread recipe later and add it to the thread as my offering.
