What's for dinner Monday?

My gosh, I've been watching the bombings in Boston and I'm really worried about my sister and BIL. Bill is a big fan of any sport and I'm sure if he had the chance to see the marathon, he'd be there. They are in Boston visiting their daughter and watching the GK's this week. I tried to call but there was no answer on their cell phone. Sis probably wouldn't be there, but he sure would. Have to stop thinking bad thoughts!!!

We're taking the kids to Horse 'N Hound for dinner tonight. The food there is so good and it's prime rib night.

What are you having for dinner tonight? And if you're in Boston please tell us anything new you may know.

We're having Caesar salad with cajun grilled shrimp. I'm getting sick of salads. Tomorrow night I'll have to make catfish or tilapia anything other than salad. Maybe even cook up a little potato.....oh how sinful!

Note: We will be having a few less shrimp....Georgy just helped herself to a few.

My best friend's daughter, her family and friend's son and his family live there. Friend's son-in-law is a runner, but don't know if he was planning to be in this event.

Thoughts for everyone in harms way. Awful!

Jim N Nicks bbq for smoked ham with lettuce deliciously red tomato slices and had the wheat bun on the side instead of eating as a sandwich.

I fixed a big salad with all kinds of green stuff plus grapes, manderines, hard boiled eggs, sunflower seeds, toasted almonds. I whipped up a quickie wasabi mustard vinaigrette. Sometimes, a salad is the only thing that will do! But, I know that some of the meals mentioned tonight are going to be on our table soon. I love Mediterranean pasta....just think Greek instead of Italian. I always add canned artichokes to mine, along with the other usual ingredients. Wonderful with chicken or shrimp. You can use canned chopped tomatoes, too.

Wow, your dinners all sound so good! I love the chicken in the slow cooker, steak, pasta sauce. Stir-fries are always good, and anything can be used in it. So versatile. Baked salmon and asparagus sounds delicious! I've got asparagus in the frig, that I'll either cook with orzo, or maybe roast it. We love it roasted. The last time we did that I made Angela's roasted asparagus breaded with breadcrumbs and parmesan. Thank you SO much for the best wishes guys. I just read them to him and he's touched. I know things will be good and he'll have a good recovery. This is a top-notch hospital AND it's all done by robot. Not laproscopy but a robot, not a human hand. He think that's very cool. LOL The time wearing the catheter and the recovery time is greatly reduced by choosing this method. And he's home the following morning, vs spending 3 days in the hospital with the traditional surgery.

This week includes my annual "special day" (a secret!). Last nite started with parmesan shrimp, breaded shrimp, coconut shrimp, shrimp alfredo, baked tater, salad, cheddar biscuits. Guess where? Brought home enough in the box for two lunches! Tonite will be a pig out buffet. Normally $20, I squeaked it down to $5, and that was free. Dumbo still prepared too much food here. A Chocolate Cake, with creamy Chocolate frosting. BBQ ribs. Some hamburger patties. A big pot of Chili. Salsa and Avacado. No cooking the rest of the week. Anybody hungry?

Prairie Rose, do you barbecue all winter long, or was it because the weather was nicer today? Morz I love a well-done roast, and the slow cooker makes it easy. I also love cranberries in my salad. Have you tried them with roasted brussels sprouts? That's a favourite with us. Monica I made sweet potato fries last week and we loved them. The last time I tried baking them, they oozed out over my oven. I didn't realize they cooked so much faster than white potatoes. Rhizo, I love reading your dinner threads. You are so darn healthy! BLF, isn't it nice when a recipe from a fellow member turns into a keeper? Shirley, I wasn't sure if today classified as a "holiday" today (Family Day) so I made sure I roasted my vegetables before 5 pm to at least get the mid-rate hydro rate. I hate the smart meters. Moni, I add cheddar cheese to my broccoli soup. Probably negates any positive benefits of the broccoli, but it sure tastes good.

Patti, I'm sure your sister and BIL are fine....keep us posted. Prayers to all those injured and killed and their families. How awful.

I had a hamburger on a mini bagel, topped with sauteed mushrooms and a slice of raw onion. Also had a cup of 15 beans.

Tonight was pork chops with french fries. Easy to put together after working all day.

I would have loved prime rib Patti. We had BBQ chicken, salad and homemade bread. Had a lovely day until the news from Boston.

A bratburger, corn muffin and egg salad. I have such exotic meals!!! Oh, I also had a left over chocolote marshmallow egg for dessert.

A friend has promised to make us slow-cooker lasagna and today was the day.

It was blah. Certainly not a recipe that I would make.

I know that Patti makes a good one, using Luckygardner's recipe. Patti can you post it sometime?

We had Taco-Rice Skillet, a handy all-in-one meal. For dessert an oatmeal raisin cookie.

We had chicken salad rollups on flour tortillas. Has some fresh fruit on the side.....canteloupe, fresh pineapple, kiwi, strawberries with a yogurt, honey, lemon zest dipping sauce. The chicken salad turned out delicious...I hope that I can duplicate it next time.

We ate outside on the patio, with the noisy birds. Good grief but they are expressive at this time of year and that time of night. It was delightful.
