I love them in any form or fashion ..I just love roasted fresh ones...they are like a whole different veggie...I loved them pickled too...I do a few jars every year...

I have never tasted them but I hate them - or rather the fact that they always 'bled' the red color into my mashed potatoes. My mother always made canned. What do they taste like?

Beets are YUMMY! DH doesn't like them, says they taste like dirt. Must have ate a lot of dirt as a kid, LOL. I grow them also, and can them and pickle them, and roast them. One of my favorite ways to prepare them is to peel them (raw) and cut them into good size chunks, along with other root vegetables like carrots, turnips, parsnips, etc., put them all in a casserole dish and add about 1/2 cup of either apple or orange juice, cover and bake until just done, then add a bit of butter.

Of course, fresh anything is always better, but beets, IMO, are one of the few vegetables that don't suffer much flavor in the canning process.

I love beets except when they are made into Harvard beets. Yuck.

I buy only the small canned rosebud beets which I use in salads and with vinegar. I don't like heated canned beets. Mandarin oranges with beets and goat cheese in a salad is divine.

I look forward every summer when my friend Vicki brings me bags and bags of fresh beets from her garden. I steam the beet greens and eat them like spinach. I will eat fresh beats heated with a sprinkling of coarse salt, pepper and a dab of butter that melts over them. I pickle the smaller ones. Vicki also gives me a couple of jars of pickled beets that she puts up in the fall.

One time when I sent home with my sister some of the fresh beets I cooked. She doesn't eat beats often. A few hours later she called me and said she might have to go to the ER - something was wrong with her. When I asked her what was wrong and she told me I just started roaring. LOLOL Her pee had turned red and she went into a panic thinking something was wrong. She was glad she called me before she went to the ER. LOL

I hate them. They are pretty much the only vegetable I will refuse to eat. I think they taste disgusting. My grandma used to force feed me canned beets as a child, so I think I'm scarred for life now, LOL.

I love love love beets. I make a big batch of beet borcht every year in the spring and dole it out to myself from the freezer like gold LOL.

I like them roasted, marinated, canned, pickled, you name it. I have tasted them raw a few times (in slaws) and they are okay, but the texture leaves me hanging. Not exactly crunchy like a carrot but crisp, and there is a stringiness.

I like beets any way I can get them.

My very favorite is to peel and grate raw beets and then fry them in butter, a little S & P, and it is the best part of any meal.

I still grow some in my small garden because I also like the leaves in salads.

I like beets too. Almost any way.

I only like pickled beets. It's the only thing I ever canned that I grew. They were so good!

Love, love, love beets. Especially beet soup. Pickled beets in our salads is a must!

I hate beets. Mom used to bottle them (pickled) when I was growing up. Couldn't stand them! And I've had cooked beets at restaurants before, hated them too. Ewww, they taste like dirt.

Growing up my grandma made some kind of a cold chopped up beet salad that was sooo good. I buy the canned, pickled ones & add sliced onions & chill. I've never had them heated but that doesn't sound good to me for some reason. My mother used to make borscht, a beet soup, when I was a kid, but I never ate it. She'd put a dollop of sour cream in it to top it off but it still didn't attract me.

If they are put in front of me I'll eat them and might even add a slice or two of pickled beet to my salad. Not a favorite though.

Love them any way you can fix them, hot or cold. Ever pickle hard boiled eggs with pickled beets? It turns them red. I was just going to pick some new beets and greens for dinner tonight from the garden. I love them with butter, salt and pepper and a little fresh lemon juice. YUM! They grow best here in CA during the winter when the weather is cool.

I love them! Drizzled with olive oil, sprinkled with salt and pepper, then roasted. Oh yum! I don't eat the canned ones at all. I think there's a big difference.

I've no idea what Harvard beets are; I'll google it.

I do not like beets of any kind. DH loves Harvard beets. I never cook them, he only gets them in restaurants.

I'm the only one here who likes them. Canned (even straight out of the can) or pickled. Once I grew them to make home-made baby food. That was the only time I made them fresh.

Love them cold, julienned in a salad, but not cooked!!

I love them boiled with the skins on, slip the skins when they are done and add some butter, salt and pepper. Also love them pickled. Don't like cold julienned beets on my salad unless they are pickled.

Love 'em! Hot, cold, cooked or pickled. My grandmother made a wonderful beet salad on a bed of lettuce with chopped eggs,mustard and mayonaise. I loved it as a kid and still make it to this day. I remember she used to use an empty tin can with both ends removed to chop the beets and eggs. She'd mix in her homemade mustard and mayo and put it all on bed of butter lettuce and then chill it. Soooooo good!

I like beets, mainly pickled, but borcht is sure good with a dollop of sour cream. Mush, your grandmothers salad sounds really good!

Being raised on a farm I thought beets were the best thing when we pickled them. I still remember we did not peel them or cut the roots off until after cooking so they would not bleed. We totally lives from the farm and have so many memories that are priceless and the beets was on the top of that list, the mystery of the bleeding was so important. I just eat them from a salad bar now but would love to have some fresh ones.

Oh yah, pickled beets, borscht, buttered beets, beet tops....oh my yes....LOVE them. count me in!

I've grown them, and the DH loves them. I don't. I do love the beet greens, and I made this wonderful dish with roasted baby beets, surrounded by the lightly steamed greens. I really wanted to love them, but...

ICK - they still tasted like beets! Honestly, I'm not sure why I was surprised, LOL. I ate the greens, and even stole the DH's share. He ate all the beets, loved them, but not enough to devote garden space to them anymore.

I said I was going to do it for dinner and I did. I picked a whole bunch of beets out of my garden. I cooked the beet greens in bacon drippings with yellow onions. The beets themselves I cooked in the microwave. It is easier to peel them after they are cooked. They just slip out of their skins. Of course your fingers are red for days afterwards but worth it. I tossed the greens with the chopped bacon over pasta with the beets on the side.

Remember my post awhile back wondering if the jars of pickled beets were still good I found from my Db and DSIL's garden? OHhhhhhhhhhh were they grand!
Pickled is the only way I have ever ate them, I don't know any other way. But HayJud's description had me drooling cause it sounded so good!

NO beets for me. Rachael Ray sings the praises of beets and anchovies all the time and I still can't bring myself to eat either one LOL

I enjoy the tops as greens, with tiny beets attached, in early summer and rather like pickled beets.

As for cooked beets ... I've felt that I can take 'em or leave 'em.

Actually, I have some in the basement that I brought in from the garden last fall ...

...all wizened up, till you can hardly tell what they are!

I have some squash, too - that are getting limp, but the flesh is still good.

I have some squash seeds that I think that I'm going to plant ... soon.

I have to post on this subject again, I have never heard of eating the tops, we always throwed them away. We must have missed some good greens and never knew it. Wish I could find some, I sure would try them.

I'm a beet lover!!! BUT, have never heard of roasted beets----How do you make those???

I think anything "fresh" is always better, but I'll eat beets any way I can get them.

Pickled is my favorite favorite.

I like beets any way I've had them, Grammie used to feed us the beet greens, cooked like spinach, and I liked them to.
My sister makes the best pickled beets, but since we live several states apart, I have to make due with the ones from the store.

I love beets!! Brings back fond memories of my youth and growing up on the farm. I use to help my mother can and learned that using the juice after the canning makes some really good jelly too! You'd NEVER know it had beet juice in it!

I'm surprised how many of you like beets. I will stand over here with the group that thinks they taste like dirt.
