Wall/Floor covering in a semi enclosed Hot Tub Porch, Help!

We're building a home and we've designed a semi-enclosed area for a future hot tub. There are three open arches (one visible in the photo) that have retractable screens installed. The build location is Portland OR which means, while fully covered, humidity is high to start with. Add a hot tub and we're not sure how to cover the ceiling and walls. There will be a 3 foot wainscot of stone veneer on most surrounding walls. Our contractor suggested cedar but I get the impression while it might be a good suggestion, he has never done it nor has any idea how to do it properly. He asked us to research it and see what we come up with.

So the question is, is cedar tongue and groove paneling a good idea above the stone and on the ceiling? If yes what type of sealant should we put on it? Next, what's required between the paneling and the insulation. I've read a vapor barrier. Should we use exterior sheetrock then cover that in cedar or something else? Anyone know? Would love some direction!
