New water heater, problems with T&P valve

We live in a 30 yr. old house in Eastern Oklahoma. When built, they installed the main water heater as well as as a 20 gallon water heater under the kitchen counter that provides hot water for the kitchen sink, dishwasher and washing machine. Due to old age, it started leaking. Easy enough to replace, right? Nope, I replaced it, wired it as directed. Turned the power back on and after maybe 6 hours the temperature/pressure valve went off, releasing water all over the kitchen floor. I checked the thermostat and it was set just a little above 125 degrees. Any idea what my problem might be? I'm thinking maybe the thermostat but I'm not sure. Any help is appreciated. FYI, the water heater is a whirlpool, electric water heater. Thanks, Greg
