Hi, walnut. Yes, I do use it for all my baking needs, except for cakes. For that I use the better than Pam recipe. I also use it when I coat my fry pan for eggs and such. I use it on all my glass dishes and pans where I would ordinarily use Pam. You will not get the after coating that is almost impossible to get off that store bought cooking sprays tend to leave.

Not a great idea to mix oil, water and heat. If you spray it onto an already hot pan you are looking at getting a face full of hot oil. And always in cooking, hot pan then oil never cold pan, cold oil then heat pan.
Baking would be the exception. Sauteeing isn't baking.

That after coating you describe is from heating cold oil in a cold pan.

While I'm at it, storing olive oil in a cool place solidifies the oil which would make it difficult to mix it with the cool water.

Oil and water doesn't mix, don't do it, please.

Recalling last nights dinner I giggled at the admonishment against mixing moisture and hot oil. Deep fried chicken breasts (for sandwiches) followed by frozen french fries. Both have moisture but the fries have the added "hazard" of a zillion tiny ice crystals attached! Really now, if you don't understand that moisture and hot oil can cause a good deal of spitting and spattering you should probably leave the cooking to McDonalds.

I can't stand the smell and residue of commercial spray-on oils whatever the temperature the pan may happen to be. I have to confess though, I don't know why I would use the oil/water concoction rather than the oil, butter or fat I would use normally.

The action of solid to gas and liquid to gas creates a different re action when in contact with heat above frying temps. In other words frozen food doesn't splatter nearly as much as water when dropped into hot oil.

Just be careful is all.

I was on pinterest a couple of months ago and found this homemade cookling spray. I have used it and find it to be so much better than pam. I use it for scrambled eggs..and I have never sprayed my frying pan with home made cooking spray WHEN IT IT WAS HOT! at anytime. True oil and water do not mix, but a good shake of the bottle will do the trick. Thanks to some who have taught me again to NEVER come on this sight and offer up any hint...LESSON LEARNED.

Thistle, you can't expect one hundred percent accord with a helpful hint. This particular one just makes no sense to me on any level....but I'm still glad that you like it. I'm in agreement about the Pam....haven't bought that stuff in twenty years.

I'll stick (har har....get it?) to my assorted oils and butter.

Don't let others run your life for you - take a slight sip of self-esteem every morning with breakfast, to build it up slowly to a bit higher level. Or a little iron for the backbone.

If there are some who appreciate your suggestion, then you've done somethig of value.

And if some offer some warnings of what to be careeful about with regard to such issues ... more information available ... to be used by whomever, as they see fit.

Is there a need for the water? Put the oil in a spray bottle by itself. I've read of a number of people doing it. I've bought the pump up spray bottles to use oil and it works in place of "Pam" and the like. I've ruined enough pans with Pam that I'll never use that garbage again.
