Fridge-life of mashed banana

I mashed some ripe bananas last weekend, and put them in a plastic container in the fridge, intending to bake with them this week. Unfortunately the week turned out to be too busy to bake, and it's still in the fridge.

I lifted the lid to check them this evening. The surface is very dark brown and the mashed banana smells VERY SWEET. There's a little liquid in the container.

I'm wondering if it's OK to use, or if I should toss it.

Does anyone know the actual lifespan of mashed banana in the fridge?

I would say about 10 minutes.....toss it!

Why would you not wait to mash bananas until just before you were about to use them? I wouldn't even give them 10 minutes.

Mom2, according to the science Carol has posted, the sugar does help reduce the available water which can change the acidity requirements. That doesn't look like much lemon juice for the amount of bananas, so if I were you I would try to find the sugar. Can you borrow some from a neighbor or something? Do you have a sugar bowl you can raid to top off what's in the canister? Or maybe you can can with brown sugar, I don't think I ever have but a search would answer that question. I don't see why you couldn't use Pomona with bananas, but I'd be concerned about reducing the sugar. Melissa

It should be fine. I finished processing mine yesterday, which was just around a month long. I opened the crocks up, skimmed off the funny looking stuff, then used a food processor to break it down in smaller bits, and then ran it through a food mill on the medium sized screen, the one that won't let the seeds through the holes. Its fizzy, thats the Kefir, and what makes it so good to eat. I had some on a burrito last night, and just for lunch, I finished a big bowl of that imitation crab with the stuff poured all over it. Ate a pint already. The best way to keep this is fresh in the fridge, where it should last weeks. Next best is freezing. Yesterday I tried canning it, and its ok, but separates. Don't use quarts, that just made a big mess - boiling up and out of the jars, and I had to redo them in pints.

seagrass: You can't buy powdered milk? I would think, like Maggie said, you could leave it out. Or, add a little more oatmeal or WW flour, just so the consistency is like a thick cookie dough. I'm no expert, but you might try a small batch. chase: yeah, I think these would hold up great. They are a moist cookie. I popped them into individual baggies, then in a big ziploc and froze them. I just grab one in the morning and by the time I'm ready to eat it about 2 hours later, it's thawed. Sure would be good warmed slightly, but I'm too lazy to walk to the cafeteria sometimes. LOL. The grocery store where I like to shop just did a massive reorganization. So, not only can I no longer find stuff but it turns out they also took the opportunity to discontinue some of my favourite brands of things such as tuna, pasta, hummus. I have a good thing - I run at 7:30 am with a group of people 3 x a week, always the same days and it is amazing how often it starts to rain just as we *finish* our run at 8:45. I did the same except I mixed them with crushed pineapple. They were getting too ripe and I wanted them for hawaiian banana nut bread that couldn't be made right away. The pineapple helped to keep them from turning but they look a little too old too. Wonder if they fermented :) !!!

I freeze mashed bananas. And when I want to make banana bread, just thaw. That way, I can buy really cheap bananas, when they get so bad that no-one wants to eat them anymore, they get mashed and into the freezer they go :)

I read in Southern Living magazine that the best way to keep overripe banannas is to freeze them whole - they come out without being excessively wet. I tried this and they worked great for Bananna Bread. HTH

I always freeze my ripe bananas whole. They keep really well that way.

When you thaw them, don't they turn black then?

I don't know because every time I freeze a banana for bread "later", I end up eating it like a popsicle! :)
I like them better than ice cream now.

No, they don't turn black after they thaw. I usually also just freeze them in the skins but if I do mash some and plan to make something later I go ahead and freeze the mash...just in case. Happens too often that what you think you'll do later turns into a week later..or two.
