Are You Fixing Food For EasterToday?

I am trying to work on my food. I did some things yesterday.

I baked my Whoopie pies yesterday and now I have the filling I made cooling so I can finish them up. I have some vegetables to clean and cut up and shred for different things. I am going to shred my cheese next for my cheese potatoes and put it all together ready to bake. I have my candied sweet potatoes partly ready to finish up tomorrow. We have decided we probably are not going to be grilling rib eyes tomorrow, just have the chicken and ham. Lots to do and still sleepy! Wish I could wake up.

What is everyone doing today? It is 60 and overcast here in central Indiana, probably more rain.

I'm cooking my dinner this afternoon. My husband just left to pick up the rest of what I need. I just have a small turkey for the four of us. We're having a simple turkey, mashed potatoes, carrots meal. He's also picking up some pies. I work full time and just don't have the time or energy to bake anything.

Saturday I'm doing the desserts, brownies and Key Lime Pie, getting things out of the freezer, setting the table, making a quiche for breakfast tomorrow. Mainly just getting organized. Need to go out for eggs and milk. Sunday I'll be up early, probably by 5 am, and rushing around all day.

It depends upon how important it is to either of us. My husband doesn't like mushrooms but doesn't notice them if they are diced, so I slip them in - sometimes in slices and he will comment but I notice it doesn't affect his portion amount any! However, I just love tuna salad on an open face sandwich and he really detests it. He likes twice baked spaghetti and I'm not a huge fan - too much cheese for my taste. So, I make up and freeze his portions of the twice baked with leftover spaghetti and on those nights he has a yen, I fix him a salad and his spaghetti and on that night I'll have a cold open faced tuna salad sandwich. We both end up happy campers. It's just the two of us now, so this really isn't a problem and it doesn't happen all that often to be a "chore" on either end. For the most part we both like pretty much the same dishes. If we both want different things that night, I just accomidate. For the most part, we like stuff prepared the same way with just a few exceptions.

Other than the traditional Turkey, ham, mashed potatoes and stuffing. I do not make anything from my childhood holiday meals. My family made things like candied yams with the marshmallow topping, pistachio pudding with the pineapple, marshmallows and I want to say cottage cheese or something like that and a version of I guess you would call it Waldorf salad. I called it apple salad with mayonnaise, nuts, raisins and I forget what else. Sadly none of those things appeal to me as an adult but they were staples at all the family holiday dinners. We also always had ribbon candy and these little candies made with fruit and nuts and sadly I haven't even had those since I was a kid. I do make things from my husbands family holiday dinners though. Like sausage stuffing. I first had it when we had Christmas dinner with his family and I have been hooked every since. Also like to make the Portuguese Roast Pork and Linguica his family likes to have at Christmas as well. I do remember my great grandmother making rum balls and rum soaked fruit cake as well. I do like fruit cake but I do not like anything with alcohol in it because I don't drink the flavor is over powering to me. But I do remember all the adults getting each other stockings full of different nip bottles and giving them to each other. They enjoyed their cocktails :) it is funny I just never acquired a taste for alcohol even though most of my family enjoyed it.

I eat a breakfast-type breakfast every morning, and have all my life. Other than cold leftover pizza in college, that is. For the majority of my life though, there is no way I could or would eat leftovers from the night before, etc. My DH is a family practice doc and he’s very into healthful eating. I agree, having been in the healthcare field myself for many years, but I absolutely refuse to eat food that’s “good for me” but tastes boring or ugh! Thank goodness we both love to cook and experiment with recipes, as I can honestly say that we eat delicious breakfasts every day of the week.

I like Zalco's combinations, but I also like to have a bit of red wine with Brie or Camembert, if it is in the evening. I like to have sparkling white wine with crab, which I normally have as a Crab Louis salad. This is my favorite thing to have for NYE.

I already have my stuffed shells in the freezer ready to cook, and the cherry pie in the freezer ready to bake tomorrow- I will just have to pop them in the oven. I boiled my beans for baked beans, and I will get everything ready in the crock pot so I can just turn it on tomorrow. The ham, breads, potatoes, veggies can easily be done tomorrow.

It's 55 degrees here today and it's raining off and on. It doesn't look like we're going to see the sun- I hope I'm wrong! DH went to the grocery store, and I'm going to mostly play with gum paste and royal icing flowers today. I'm planning a Mother's Day cake.

No, I don't cook dinner for any reason. LOL I have done that all of my adult life until 5 years ago. I retired as much as a woman can. LOL

I'm making sauce for spaghetti tomorrow. We've already had ham and potato salad, etc, this week, it's just the three of us so no big fuss. Just the way I like it, as my mom would say.

Just put in oven kahula pork. Gonna start smelling pretty good soon.

Have a to do list.

Alaskan cole slaw, parmesan baked potato wedges, fried okra

On the goodies agenda is salted peanut chews for afternoon snack and dessert is strawberry short cake.

And especially for GS to take home, his marinated cheese crackers.

DS and GS are coming for Easter lunch.

Going to daughters for dinner tomorrow. As always, I am responsible for the pickled eggs and beets, which I prepared last Sunday, and daughter requested the usual pineapple casserole from me. I'll fix it tomorrow. Today it is raining, so I'll be inside loafing for the most part.

So far today, besides working a couple hours early this morn, and doing laundry and house cleaning.....I made a strawberry pie, banana cream pie, peach pie, deviled eggs, dinner rolls, scalloped potatoes, ham and turkey - the last 3 in the oven now for dinner at 6. Will fix baby carrots to go with all of this. Whew! Having a glass of vino.

I baked my ham this morning. I am working on my hot fruit casserole and potatoes au gratin. My lima beans are cooked and my mustard greens. In the morning I will make my macaroni and cheese, deviled eggs, banana pudding and iced tea.
My coconut cake and Mexican cornbread are ready and the rolls are ready to bake.
My table is set for 16. Hope no one else shows up or I eat in the kitchen.

My ham is baking, scalloped potatoes are baking.Green beans and cranberries are done, made my sister pumpking pudding.Getting ready to make the keylime pie.Pickled pineapples are done. Cornbread and rolls I will make after Church. Happy Easter to all!

Turkey breast, green beans, carrot souffle, mashed potatoes, relish tray, corn on the cob, deviled eggs, and Glenda's chocolate pie for dessert plus the usual tea, coffee, hot rolls, butter, etc. Wishing each of you a blessed Easter day!

Does going to Honey Baked Ham to pick-up 1/4 ham and the bakery for a bunny rabbit cake count as fixing food ?

The kids have been fending for themselves the past few days so I'm going to make a big dinner tomorrow. We're also going to color Easter eggs after they come home from school. I'm thinking of getting a ham and fixings for Glenda's pineapple casserole, since you all have been "talking" about it lately. I'll probably also make potato salad and some type of dinner roll.
